Going straight to the "Outlaws" album you could definitely do "Me and Paul" but what would be more interesting would be if you could work up something with "Rambling Man".

Before the Cold Wind Blows is another I think you'd do a great job with, the harmonies in particular. IMO High Carbon Steel do a great cover of this.

Your album just took the number one spot in my pickup which is always reserved for new music I'm really enjoying at any given time. I find myself looking forward to every new video these days. Kudos to whoever is doing the recording. The mix and overall tone is impressive.
