Ingredients:
1kg (2lbs) Boneless skinless chicken thighs
4-6 Garlic cloves
4 Bay Leaves
1 Cup of Yoghurt
4 Tbsp tomato paste
3 Tbsp Lemon Juice
1 Tbsp Olive Oil
1 Tbsp White Vinegar
2 Tsp Salt
1 Tsp Ground Cumin
1 Tsp Garlic Powder
1 Tsp Boharat or All Spice
1 Tsp Onion Powder
1/2 Tsp Chilli Flakes
1/2 Tsp Ground Coriander
1/2 Tsp Cinnamon
1/2 Tsp Smoked Paprika
1/2 Tsp Turmeric
1/2 Tsp Black Pepper
1/2 Tsp Ground Ginger
1/2 Tsp Cloves
1/4 Tsp Nutmeg
1/4 Tsp Ground Cardamom
Sandwich Ingredients:
Lavash or Lebanese bread
Salty Lebanese pickled cucumbers or cornichons
Toum sauce
Chilli sauce
Marinade directions:
1. Butterfly or pound your chicken thighs until they are 1/2 cm or 1/4 inch thick
2. Crush your bay leaves using a pestle and mortar, then add to a bowl with the remaining spices
3. Mince your garlic and mix with the Yoghurt, Tomato Paste, Lemon Juice, Olive oil, white vinegar and the spice mix. Stir until well mixed and then add your chicken in to the bowl and mix to ensure each piece is well coated in the marinade
4. Place your chicken in the fridge for a minimum of 12 hours so the marinade can penetrate the chicken
Oven Grilled shawarma directions:
1. Slice your chicken thighs into strips about 1/2 cm or 1/4 inch thick
2. Using a metal skewer, pierce your chicken strips all along one side and slide them onto the skewer
3. With a second metal skewer, pierce the opposite end of the chicken, so that the chicken strips are suspended between both skewers
4. Line a baking sheet with foil, then place the skewers on the edge of the sheet. They should be floating above the sheet not sitting in it (you may need to use a deep baking dish instead)
5. Place your tray in the oven with your grill or broiler set to medium and cook for 3-5 minutes per side, rotating between them. Place them back in the over for 2-3 more minutes until slightly charred. Temperature of the chicken should read 74c or 165f when done.
Pan Grilled directions:
1. Heat a grill pan or griddle and place a few chicken thighs in it, but don't overcrowd the pan.
2. Cook them on medium high heat, flipping them every 3 minutes until cooked through
3. Remove and slice into thin strips
To make a shawarma sandwich:
1. Place a piece of bread on your work surface and slather on a couple of tablespoons of Toum or garlic sauce
2. Add your chicken pieces on top, as well as some pieces of sliced pickle
3. Add some chilli sauce to the sandwich then roll it up and seal
4. Place your sandwiches in a grill pan of griddle, and weigh them down with something heavy. Allow them to sear for 30-60 seconds per side until grill marks form.

Those were pieces of pickled turnip. A lot of the time pickles in the middle East are made using cauliflower, carrot, turnip and cucumber in the same jar. Maybe you can find it at an Arab store.

Just wanted to come back to this video to give my praises. This is, without a doubt, hands down, the BEST recipe for that restaurant-level chicken shawarma. So many other recipes were maybe 70-80% there, but were always missing something. I followed the recipe completely with the exact ingredients that Obi mentioned, including the toppings and sauces. Undeniably the best source for learning to cook Middle Eastern cuisine on KZfaq. Growing up, I never really understood the nuances of the various cuisines across the Middle East, from Egyptian, Syrian, Palestinian, Lebanese, Moroccan, etc. Growing up, I simply considered it all to be "Arabic food" (which is a disrespect to the various cuisines and their individual cultures). Love that this channel breaks down the wheres, whys, and the hows for each dish. Thank you, Obi!

This recipe is LEGIT. I followed the recipe exactly and used the grill pan method to cook it. I also followed the linked recipe for toum. The final result tasted like the real thing from overseas (tasted in Palestine and Jordan). This is one of the best I've ever tasted in the U.S. and I can hardly believe it was made in my own kitchen! Thank you for the recipes. Keep up the amazing videos!

This looks delicious! Best chicken shawarma I ever had was in Riyadh, loaded with the perfectly thick garlic sauce, pickles and fries. I loved paring it with an amazing fresh cool fruit juice you can find at the local fruit stand.

just made these this weekend, I'm glad I did the oven grilled skewer method because they rendered out a LOT of fat while cooking. I think next time I do them I'm gonna leave them in for a little longer after the last flip though since I didn't quite get the char I was looking for with them. Tasted amazing.

If you had a deeper baking tray to cook the meat on, one technique that could add great flavor is placing vegetables below the cooking chicken, so all the marinade, fat, and flavor dripping off the chicken is caught by the veggies! Great vid👍

That's one of my favourite recipes I've done so far, so incredibly delicious and like you said the onions are insane. They'll also go good with shawarma, or you can wrap the shawarma in Lahmacun instead of bread. So many delicious combinations to try!

Awesome! Awesome! Awesome! Very glad this channel's picking up! And excellent recipe! One tip which imo makes the skewer method probably the easiest: instead of slicing the thigh before skewering, score it deeply instead. SCORE IT ON BOTH SIDES! This makes it tremendously easier to skewer than thin strips since it will still be in one piece and yet still exposes the meat to the marinade and creates little bits that char up nicely under the grill! Then once cooked you can slice it/break it apart as desired. Keep up the good work man! Can't wait for next week!

Great tip, in fact I think doing that in an accordion method to stretch it out will be even better. You could also thread the thigh on fully then slice into strips working your way around the skewer. Thanks for watching, I appreciate having you around!

Great video! I've been trying to cook this at home without the same results and I will definitely use this technique next time. However, I will add fries inside the sandwich (something I tried while in Beirut) which I think adds both flavour and texture.

Dude this is legit the best shawarma I've ever had. I made the marinade almost exactly as you did, accidentally doubled the tumeric, and after tasting tripled the black pepper and chili, also added a pinch of MSG to ratchet it up a notch. As for the chicken I went with half breast, half thigh. With this part I veered a bit farther from your recipe because I cooked it soovide and then only seared it on the pan. So I got an exact, and mouthwateringly soft, consistency on the inside of both the breast and the thigh. I also threw in the bag a couple throats for the taste and gelatin. The marinade and juices I reduced in a pot while searing the meat, so I could then coat the meat up with it without it being runny. I also like to assemble my pita quite different than you, but the core element here is the marinade which came out fantastic. This was the first video I ever saw by you, and I made this like two days later. This is now my new workdays lunch. Already recommended the recipe and your channel to anyone willing to listen.

absolutely love this channel. genuine care of food from the content creator with precise detail. middle eastern food is also totally underrated as its one of the best uses for so many of these ingredients. i think its better than italian!

This looks amazing I'm really looking forward to trying it. I was sent here from Chinese Cooking Demystified and I'm just thrilled to have discovered this channel; it's just what I've need in my life! Question: For fasting seasons I'm often looking for vegan recipes and the Middle East seems to have many wonderful recipes that I'm largely unfamiliar with. Do you think you would be able to do a short series on some fast-friendly recipes?

I've wanted to try Shawarmas for sooooo long! They've always looked so delicious! I recently moved to Arizona and it seems like the population here is rather bland in restaurant selection I hope I find a place soon that makes delicious authentic honestyle food I really desperately want to try an authentic Shawarma!

living in arizona, we truly do lack restaurants besides fast food. ive found 2 good middle eastern restaurants so far within a reasonable distance, though undoubtedly there's more i probably havent found. otherwise its all burger and pizza chains and mexican food

I had no idea what this would taste like so I decided to try it. I'll admit I was worried during the process of making the sauces, baking the bread and skewering a million pieces of chicken that I wouldn't like it after putting in all that work, but it was definitely worth it.

Me and my bro made this recipe for dinner and I wasn't really expecting anything but DAMN! IT'S SO SO SO SO SO SO GOOD!!!!!!!! I wish we bought more flatbread so we could make some more. 🤤 Even my dad who's not much into middle eastern food loved it! Genius! The way the chicken is cut in strips and skewered to give the same appearance as chicken shawarma off the vertical spit is clever. Great recipes and easy to understand. I loved the Thom and chilli sauce video too. Thank you for the videos.

Found this recipe a few weeks ago and made the chicken, we LOVED it. It's exactly what I have been looking for to make take-out equivalent shawarma at home! I can't wait to try some of your other recipes. We just cooked the chicken in a cast iron pan & chopped it all up for the freezer, and we reheat portions in a super hot pan which gives a pretty convincing grilled flavour. This is 100% going to be a staple for us now!
