Gram makes these still. I love them. But she will only use the red sockeye salmon. If you use the pink salmon, we have to fight. It’s the rules.

If you open the wide end of the can, the fish slides out in a big chunk. It is canned in sections that allow you to separate the sections, remove the bones, then the dark meat and skin. I use only the pink salmon meat. Then I add an egg, salt and pepper. I make them into Pattie’s and roll them in just corn meal. I roll them 2 or 3 times in the meal, then chill them for about 30 minutes. Fry them in Crisco. I get them total crispy. Yum!!!

Nothing beats your mum's or grandmas cooking. My grandmas salmon paddies were nearly this exact same recipe but hers had turmeric mashed potato in it as well. It's surprising how perfectly well Mash potato pairs with salmon.

Grew up on these and mom would mix ketchup and mayonnaise together for a dipping sauce that we just spread on the top. Coleslaw or potato salad on the side. And a fancy little relish dish with tiny sweet pickles, green onions, radishes and little yellow pickled peppers. LOL That relish dish was on the table for every meal. So so good, great memories. Thanks for sharing!

Just made this for dinner. The cornmeal is a game changer! I will definitely make this my go-to recipe. My only advice is to add your favorite seasoning to it. I added salt and pepper, and it was amazing like that but a little bland. I'm going to add the yellow label cavenders seasoning next time. Thanks!

It's funny, I read a whole Reddit forum about how you don't need to actually remove any bones from it if you smash 'em thin enough, and they don't actually hurt you. It's just a personal preference. I didn't even notice them tbh. I musta got lucky?

Why did you drain the salmon juice? Been making them over 50 years. I don't know how long my mother and grandmother made them before me. As in the Depression era, and still today, don't waste anything! Plus the full flavor is with the juice. Peace be with you.

me screaming at the screen FLIP THAT CAN My grandmas are both dead so it's okay for me to say this: not stellar cooks. Open some cans, dump in a pot/casserole dish, no seasoning kind of stuff that gives the Midwest a bad rep. Mom learned from that so it's what I grew up on too. I never saw my mom use fresh onion, garlic, herbs, anything like that ever in my childhood. Was very motivated to learn to cook for real when I went to college. And you don't need a double boiler, you can use a heatproof (metal/glass) bowl in a pot of boiling water. :)
