Homemade popsicles in chocolate, without condensed milk!

Eggs (4 pcs.)
Sugar (120g/4.2oz).
Milk (200ml/3/4 cup + 2 tbsp).
Cream 33-36% (360 ml/1+1/2 cups),
Grate chocolate (30 g / 1/3 bar).
Ice cream molds (8 pcs.).
Chocolate (300g/10oz).
Vegetable oil (2 tbsp).
RECIPE 2 - Homemade Chocolate Ice Cream with Egg Yolks! WITHOUT condensed milk!
Egg yolks (4 pcs.).
Sugar (120g/~1/2 cup + 1 tbsp).
Milk (200ml/3/4 cup + 2 tbsp).
Chocolate (100g/3.5oz).
Chocolate cookies 16 pcs.
Cream 33-36% (500ml/2 cups).
Chocolate (60g/2.1oz, optional).

Ciao, belle le due ricette di gelato, complimenti, brava. Ma ho un dubbio sulla morbidezza al momento del consumo. Non è che si formano micro cristalli di ghiaccio? Io penserei di aggiungere alla crema inglese ( tuorli + zucchero + latte) un cucchiaino di maizena, per addensare un po la crema. Ricordo che la crema inglese non deve bollire ma raggiungere gli 80/85 gradi massimo, e comunque quando vela un cucchiaio è pronta. Se mi rispondi mi fa piacere. Un abbraccio. Nonna Lina dall`Italia.
