A baby villager is 0.3 blocks wide. So, baby villagers can escape through any part of the fence that does not have a block under it. However, they won't pathfind onto fence blocks, so the only way they will escape should be if they're pushed out of a hole in the floor under a segment of the fence. They could also be killed by zombies, witches, lightning, pillager patrols, raids, or indirectly through depression or neglect.

For more sticks you could make an automatic bamboo farm. You get TONS of bamboo. Which in 1.20 you can turn into sticks.
