Hello everyone, today we are preparing a luxurious festive chess-pilaf.
Ingredients:
Long-grain rice - 800 grams;
Lamb - 1 kilogram;
Chestnuts - 300 grams;
Dried apricots - 300 grams;
Melted butter - 1 kilogram;
Onion - 1 kilogram;
Saffron - 5 g;
Turmeric - 1 g;
Allspice;
Salt.
Method of cooking:
Fry onions, meat, dried fruits in melted butter. Long rice, for example, of the "Basmati" variety, wash well and soak in water for at least 1 hour. Next, cook the groats for 12 minutes. Wash the rice well with boiling water so that it is crumbly.
We take pita bread. Cut out 1 star, and divide the others in half. Lubricate pita bread with melted butter and put it in a thick-walled pan. First, we add rice, then put dried apricots, chestnuts and meat in the center, add a second layer of rice, pour in the meat broth and ghee. Cover the shah-pilaf with lavash. Cover and bake in the oven for 90 minutes at 356°F (180°C).
