Man I love all kinds of fish but smoked trout or smoked salmon is my favorite. I think its ok to smoke or cook with the skin on. At a teppanyaki restaurant I worked at we de skinned but the head chef would crisp the skin. He was the only one who like the skin crisps until I came along. My buddy over smoked some Salmon and was going to throw it out. Until i tried some. It was like a chewy salmon jerky. I took everything he was going to throw out.

If you like you smoked trout a little more dry, soak it in spiced rum for an hour after washing off the brine. Old fella from the west coast showed me and damn is it good.

My dad took some trout I caught and instead of making a tuna casserole he used the trout meat. It was delicious, you ought to try that. Your recipe looks phenomenal too!

Best fish there is to eat and the skin is the best part! Nice and crispy it’s so good! I’ve never had trout like that but I bet it’s amazing! Looked great! Nice piece of toast! Yum

Everyone needs a friend named Bob. A generation wiser who needs a young friend to keep them bones moving. I keep several such friendships. Wouldn’t trade them for anyone my age for anything.

I’ve cooked trout for so long I have a trick I do, once it’s cooked you can find the spin and peel it and all the meat comes off and all the ribs stay on the spine works every time.
