I liked spinning around him and poking him with a knife. I do this first thing after creating a character. It's much faster than defeating the last giant(Which was a little difficult for me until I realized that you can simply move away from him and come back, provoking him to strike with his hands and instead of taking damage from his legs. This method does not require rolling, running, jumping or shields and the probability of taking damage is about zero.)

A good setup is get inside the boss arena from the most right spot of the fog gate, then you wait, count 6 boss steps and roll pass. Really easy to remember and to execute. Really nice to get easy souls and buy melentia 10000k worth of items and get instant SSR+1 from the start.
