Howdy fam, I gotta say DEFINITELY do this in a cast iron pan- I've made the pasta 3 times since shooting this video and cast iron is the best way, bar none. So, we're all going to agree to believe in the first story behind this pasta, right? Also, What should I make next?!

Oh, I so will try this tomato heavy dish! Yum! Thank you, Merle! My favorite comfort food and dish was my Mom's Chicken Paprikash; she and I made it together as vegetarian, but not vegan. I've not yet tried making it on my own since she passed away. It would be very neat to see your version one day. Thank you for your awesome content!

I dont have a cast iron pan but Im sooo giving this a try today! Btw I would love to see simple-ish recipes that incorporate rice, pasta or potatoes with veggies. Im trying to eat more veggies and im having a hard time finding simple ways to make them so I’d love to see your take on that!

Don't simmer tomatoes in cast iron! You can ruin the seasoning on the pan and also make the food taste like iron eventually.

This is a terrible idea since it's cooked at a vigorous simmer. MAYBE enameled cast iron... Just make it in stainless.

Hey! Just as a vegan Italian girl, I loved see you try out this recipe. I make this pasta a lot and every time I think “I bet Americans would like this frying, garlicky one pot pasta” hahaha One tip I might give you if you want to make it in the future is that if you want that “burned” effect you should add first the oil the garlic and the spice, then just a bigger proportion of actual tomato sauce and the spaghetti and let them in there till they get a little bit burned and than add the watery sauce. This way tue pasta gets the right texture and an almost smoked flavour. I hope this might be helpful!

I didn’t have any pans that weren’t nonstick, so I just went ahead and used a nonstick pan. Then I realized when it was too late that I didn’t have any tomato paste, and substituted ketchup. Still turned out very good, and even with the nonstick pan I still got the burned flavor filled crispy parts. It was good!

Thanks for cooking this - it is such a fun recipe! You should checkout Pasta Grammer for more Italian dishes - while they are not all vegan - they have some great options! (Also- love it if you could do another "crime and cook" - those were so fun!)

Another good thing you can do is fry pasta in oil get good fried pasta flavors THEN add the oil at the end just to heat it up so it also doesn't loose to much flavor (unless your trying to reduce to enhance flavor from seasoning etc)

If you stir it less, it will caramelize faster. Moving the pasta around too often prevents this.

Yeah! It’s the same as browning meat or vegetables: so many people are afraid to leave things still, and end up moving them around way too much so they never brown. :(

Love your vids! Sweating and flushing of a patch of skin near the ear that occurs when someone is eating. Frey's syndrome is a rare complication of surgery or an injury of the salivary (parotid) gland in the cheek. Symptoms include sweating and flushing on the cheek, temple or near the ear, particularly when eating foods with more intense flavours, such as sour, spicy or salty foods. Various treatments have been tried, but their effectiveness is limited.

OMFG - I'm so glad you said the thing about sweating when eating sour stuff. It happens to me when I eat kiwi. I start sweating on my upper lip and under my eyes. WHAT IS THAT!?!

Yes i sweat when there is the slightest acidity in my food even though it might not particularly be sour sour to my taste buds. Even more so that when i eat something spicyy

I usually don't have a food recipe request because I only ever eat the same three things lol BUT I actually have one today!! I am vegetarian, have been for like 15+ years. I was never a fan of sea food but one I used to love was tuna! With just pasta; chefs kiss! I used to get vegan tuna (or tuno ad they called it) and it was soooo good and it was very spot on! But it seemed to have been discontinued or something and I've really been missing it. So I'd love to see your take on how to make a home made vegan tuna! Please consider it? It'd make my day!! I went to a friend's house recently (we're both vegetarians), I'd brought some nachos to share as a last minute decision, but no dip, so she whipped up a dip with what she had at hand. It was mainly garbanzo beans and I don't know what else. When I tell you it tasted almost EXACTLY like tuna!!!! 🤯🤯 It was insane. I've been vegetarian for eight and a half years and I hadn't tasted tuna in that long, but in that one second the flavor all came back to me lol. I wasn't a very big fan of canned tuna to begin with, but it was definitely... interesting to taste "it" again.

I love this pasta. I made a version of it for non-vegan family and it went over well. I love how it's easy to add in things in to the pan partway - chopped up olives or broccoli, or spinach, or peanuts.

This looks really good. Pasta is amazing and great for night in of streaming a movie and eating on the couch. I wonder if you can make a cream sauce with vegan cream cheese and do this. And on that note, I wonder what else can be made with cream cheese.

Ah, if the recipe wouldn't be so stressful I would do it more often. I prefer using short grain rice and applying the same technique, so a very basic paella in my case! You should also try blooming freshly ground black pepper instead of using garlic or using a solution of pimenton instead of the tomato broth. The former gives a nice savory sensation which goes well with the sweet tomato, the latter is even more savory, spicy and smoky.

@@geminisabah ...Dude. Anchovy paste is by definition LOADED with salt. I would hope you're being facetious, but I'm disinclined to think you are. The entire reason that anchovy paste imparts a salty flavor is literally fucking because the paste itself has a ton of salt already in it! Anchovy paste does not somehow just have a magically salty flavor....! And that aside, this is a vegan channel. Most people here are very specifically not interested in putting anchovies in their food.

Check out Pasta Grammar for italian recipes. They're not vegan, but you could try to veganize them. They made pasta all'assassina so at least that's a real italian recipe! 😊

Have you seen the movie Life of Pi? It's similar to the story of the pasta.. he tells 2 tales, and you are left to believe whichever one you want. Reading the book changed my life for the better like a decade ago, in the same way I'm sure trying this pasta will. 👼🏾👍🏾

A trick I learned from an Italian is that you can reduce the tomato acidity by adding a tablespoon of either honey or brown sugar! ❤

Merle the sweating you’re getting may be from the acidity of the tomatoes. You can combat that by adding a little bit of sugar or baking soda to your sauce. That’s what my grandma always did!

FYI tomatoes are highly acidic and will ruin the seasoning on your cast iron pan, making the nonstick-ness go away.

And you’d be correct. It’s OK for brief cooking, but I wouldn’t do it for anything that simmers/stews in the pan for a while, like this does.

@@MerleONeal It just seems like a lot of extra work. I would just do the sauce, add 3 cups of water and pasta and cook till tender... I do mushroom stroganoff like this now. 4 cups of liquid to one pound of pasta. Voila!

I guess you meant symphony, not cacophony. Also screw people coming into comments and saying "this is the right way, that is wrong, this is wrong". Cooking is a living thing. All the authentic dishes evolved over decades or centuries, and every region makes them different. The internet trend of suddenly deciding 'this is the only true recipe' is antithesis to good and fun cooking.

The only thing I don't like about this is that when you give it your rating of 8.8, you don't elaborate on whatever it was you thought could have been done better. Which is not to say that 8.8 is a bad rating, obviously. But you clearly think there's SOMETHING about it that knocks off a point. Some of us would like to know what that is.

I’d guess that the flavor, though very good, doesn’t have an intricate profile you’d need for a dish to get a 9 or a 10. Or maybe she’s just a tough grader. 🙂

Please just watch Pasta Grammar, Vincenzo's Plate, or Adam Ragusea if you're trying to make this dish. Pasta Grammar was one of the first to revive this dish in the states. Vincenzo is KZfaq's resident Italian snob. Adam Ragusea puts a lot of science into the "why" and the techniques of the dishes he makes. Or at the very least wait until Merle uploads an updated video of her cooking the dish correctly. No hate on this channel, but this doesn't do the dish justice.
