i would try and argue that enchanted golden apples (notch apples) are the best food source... but you aint getting enough of those to fuel an entire hardcore world at all.

For the gym you could have used end rods for the bars and wither skeleton skulls for the weights to make it look a little more realistic even though steeve is pretty strong considering he can carry thousands of stone blocks.

I have a suggestion for the end gates. For Entering and Exit you could make them as teleporters. Leading to cities or space stations I know it would cost a lot of materials and time but it would be a fun side project
