The 2 outcomes he's betting on are "Both teams to score - Yes" and "Both teams to score - No" so if only one team scores, your "Both teams to score - No" bet would win. He says you're betting on both teams not to score which isn't quite right, you're just betting against both teams *to* score.

Yes it is. Check again; £10 * 2.5 = £25 return. £10 @ 6/4 = £25 return. 6/4 = 1.5 + 1 (stake) is 2.5.
