Recipe: Slice half of a yellow bell pepper, half of a red bell pepper, 20 cherry tomatoes, half of a red onion, 5 mini cucumbers, place them in a mixing bowl, then add 10 olives and 4 oz feta cheese. You can add meat, beans or other vegetables in. Dressing: Add 1/3 red wine vinegar, juice from 1 lemon , 1 tsp of Dijon mustard, 2 minced garlic cloves, ½ tsp of dried oregano, ¼ tsp sea salt, ¼ tsp of black pepper in a medium bowl. Pour ¼ cup olive oil in, stir while drizzling. Pour the dressing in before serving.
