Hi! Both are correct. I wish I didn't eat refers to the present. I wish I hadn't eaten to the past.

English Bits I don’t still get it. I wish you wouldn’t hit my boy. This sentence is also in the past. I looked this sentence up on Google and it was with would and not had. I am puzzling 🤔 right now.
