Because they use only modern technologies such as XML and Pascal

XML schema allows strict standard while it is harder to to do so in JSON.

XML IS out date because of its heavy lifting and Designing challenges Soap was Replaced by RCP Remote Procedure Call, They fast 10x lover size then xml and Scheme first . I think this video was before gRPC and now as I have seen NDC Developer site they've switched to json but still you're behind

XML is a standard for messaging between airline PSS and external distribution systems and NDC platforms. Retailers that source airline content from technology providers may expect to receive travel data in JSON via REST APIs. This is a more modern type of APIs able to handle rich content transmission.
