Proteins - 100g
Sugar - 180g
Vanillin - a pinch or 20g vanilla sugar
Salt - a pinch
If you are afraid of failure, play it safe and add a pinch of citric acid or a teaspoon of lemon juice to stabilize the proteins.
Optionally, you can add 50g of powdered sugar for faster drying.
* Large egg (C0) - protein 35-40g / pc, small (C1) ~ 25g / pc
