If you can make instant noodles, you can make seafood white beehoon. In this recipe, I share with you a few hacks so that you can make this very popular dish within 15 mins!
There are a few components to seafood white beehoon. The most important is the broth.
In this recipe, we use Knorr SavorRich Chicken Concentrated Seasoning to make a tasty broth in literally seconds. Of course, if you have more time, you can throw in some chicken bones and chicken feet and simmer the broth for another hour to bring it to the next level. But on those days that you a really just feel lazy, the concentrated seasoning is a real time saver.
The other key is to use beehoon that is already portioned out into individual portions. You can easily buy these from the supermarket. That will save you that extra step of blanching the beehoon first. With the seafood, I am using prawns and sotong. But actually, you can use anything you like. Pork, chicken, crab sticks, scallops, clams are some alternatives.
The way to prepare the eggs are essential to this recipe. You don’t want to overcook the eggs. It should still be a little runny when you add the broth so that the eggs mixes into the soup!

INGREDIENTS
Knorr SavorRich Chicken Concentrated Seasoning 1 Tbsp - bit.ly/LazKnorrSavorRich
Water 500ml
Gelatine powder 1 Tbsp (optional) or cornstarch 2 tsp
Eggs 2
Chopped garlic 2 cloves
Beehoon - 2 x 55g portions
Prawns x 6
Squid x 6 pieces
Chye Sim x 3 stalks
White pepper
METHOD
1. Mix Knorr SavorRich Concentrated Chicken Seasoning with water and gelatine or cornstarch
2. Heat pan and when hot, add oil and garlic and sauté for 1 min
3. Add eggs and quickly scramble
4. Before the eggs are fully cooked, add stock and bring to boil
5. Add beehoon and simmer for 3mins
6. Add seafood and Chye sim and simmer for one min or until seafood is just cooked
7. Season with white pepper and serve
