Pumpkin Rice
Ingredients List
--------
2 slices pumpkin grated (about 1-2 cups)
1-2 tbsp butter (I used kerrygold)
1 and 1/2 cups rice of choice (I used jasmine rice)
1 cup coconut milk
1-2 chopped peppers (optional)
1 spring onion
Thyme
1 cup water
Salt to taste
Black pepper to taste
All purpose seasoning
1 scotch bonnet pepper
❗️ low heat for 15 minutes. Fluff then cover for another 5 minutes❗️

my grandmother used to make this with salted pigtail, watching you cook always brings back memories of home, especially since the younger generation prefers fast foods 😂😂

@@jhea__nell8910 oh Yea, u can use salted beef if you like also you can add chicken wings with scotch peppers for a little kick. You even slice up some okra in it. Rastamen add okra, carrots and cabbage just no meat lol

Girl you can cook, are you Trinidadian? I normally cut my pumpkin and half boil it then add seasonings and rice after I will try this method definitely.
