This creative variation of lasagna

Ingredients for a gratin dish for 5 to 6 people:
THE SPICES
1 carrot
1 piece of fennel or celery
1 onion
BOLO SAUCE
800 gr. minced chicken meat
olive oil
3 tbsp. tomato sauce
1 C. tsp. tomato paste
15 cl. chicken or vegetable stock
2 cloves garlic
2 bay leaves
oregano
thyme
salt
black pepper
a little water
BÉCHAMEL SAUCE
80 gr. butter
80 gr. of flour
70 to 80 cl. milk (cold)
salt
pepper
nutmeg
