Ikan Merah 3 Rasa / Sweet, Sour and Spicy Fish Recipe.
No corn flour mixture added. Instead can thicken the gravy by cooking this way.
Ingredients to coat fish
1 whole fish
salt
turmeric powder
corn flour
white pepper
Other ingredients
2 kaffir lime leaves
1 lemongrass
3 bird's eyes chilies
3-4 cloves of garlic
1 red chili
1 tbsp ginger paste
1/2 cup onion
1/2 cup cucumber
1 cup tomato
1 cup pineapple
2 stalks of coriander (separate into 3 portions, root, stems and leaves)
2 tbsp lemon juice
2 tbsp oyster sauce
3 tbsp chili sauce
1 tbsp chili blended paste
1 tbsp fish sauce
1/2 cup tomato sauce
1/2 cup water or lesser than this
1-2 tsp brown sugar

Method
Coat the fish with turmeric, corn flour, white pepper and salt. Keep in fridge while preparing the sauce. Heat a pan with oil. Sauté garlic, ginger, lemongrass, coriander leaves root, stems and onion till translucent. Add tomato and cook till soft. Add cucumber, pineapple, oyster sauce, chili sauce, tomato sauce, chili blended, red chili, bird's eye chili, fish sauce, water, kaffir lime, salt and sugar. Let it boil and the gravy thick slightly. Add lemon juice and off the flame. Separately, deep fry the fish and add the sauce before serving.
