*सामग्री:*
- मैदा - २ कप
- घी - १/२ कप
- दही - १/४ कप
- बेकिंग पाउडर - १/४ चमच
- चीनी - १/२ कप
- इलायची पाउडर - १/४ चमच
- बादाम - पिसी हुई, गार्निश के लिए
- घी - तलने के लिए
*तरीका:*
1. एक बड़े बाउल में मैदा, घी, दही, बेकिंग पाउडर, चीनी और इलायची पाउडर अच्छे से मिलाएं. इसे लड्डू की तरह गूंथे।
2. अब इस गूंथे हुए आटे से छोटे-छोटे गोले बनाएं और उन्हें हल्के हाथों से दबा लें ताकि गोले केंद्र में थोड़ी धबक बन जाए।
3. एक कढ़ाई में घी गरम करें।
4. गरम घी में बलूशाही को धीरे-धीरे डालें और मध्यम आंच पर सुनहरी और क्रिस्पी होने तक तलें।
5. तली हुई बलूशाही को निकालकर थोड़ी देर के लिए ठंडा होने दें।
6. ठंडा होने पर बादाम पिसी हुई से गार्निश करें और परोसें।

Balushahi is a traditional Indian sweet delicacy that's similar to a glazed doughnut. Here's a basic recipe to make Balushahi at home:
Ingredients:
- 2 cups all-purpose flour (maida)
- 1/2 cup ghee or unsalted butter (at room temperature)
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 cup sugar
- 1 cup water
- 1/2 teaspoon cardamom powder
- Saffron strands (optional)
- Chopped pistachios or almonds for garnish (optional)
- Oil or ghee for frying
Instructions:
1. *Prepare the Dough:*
- In a mixing bowl, combine the all-purpose flour (maida), ghee or butter, baking soda, and baking powder.
- Mix well until the mixture resembles bread crumbs.
2. *Knead the Dough:*
- Gradually add water, little by little, and knead to form a smooth and stiff dough. Be careful not to over-knead.
3. *Rest the Dough:*
- Cover the dough with a damp cloth and let it rest for about 30 minutes.
4. *Shape the Balushahi:*
- After resting, divide the dough into equal-sized portions and shape each portion into a smooth ball.
- Flatten each ball slightly to make a small disc, then make a slight indentation in the center with your thumb or finger.
5. *Fry the Balushahi:*
- Heat sufficient oil or ghee in a heavy-bottomed pan or kadai over medium heat.
- Once the oil is hot, reduce the heat to low and carefully slide in the prepared Balushahi discs, a few at a time. Fry them on low heat to ensure they cook through and turn golden brown evenly.
- Flip them occasionally to ensure even frying. It should take about 12-15 minutes for each batch to cook properly.
- Remove the fried Balushahi using a slotted spoon and drain excess oil by placing them on paper towels.
6. *Prepare the Sugar Syrup:*
- While the Balushahi is frying, prepare the sugar syrup. In a saucepan, combine sugar and water. Bring to a boil over medium heat.
- Stir continuously until the sugar dissolves completely. Add cardamom powder and saffron strands (if using), and boil for another 3-4 minutes until the syrup reaches one-string consistency (where a single thread forms when syrup is lifted between fingers).
7. *Dip and Garnish:*
- Dip each fried Balushahi into the warm sugar syrup, ensuring it is coated evenly.
- Remove quickly and place on a plate. Garnish with chopped pistachios or almonds if desired.
8. *Serve and Enjoy:*
- Let the Balushahi cool and allow the sugar coating to set before serving.
- Balushahi can be stored in an airtight container for up to a week.
