You wouldn't think you could get so much flavor out of tea but the end result is a combo of milky vanilla, chocolate, ginger and tea combined. Sooooo good.

when there're people drinking it daily from the block, I would not worry much. Great documentary. Street vendors are basically forbidden here in Hong Kong, no way for people to see clearly in person of what's happening in the food making process easily.

This isn't made with real tea leaves, it's a cheap knock off when the British tried to harvest and cultivate it in India after opium wars. What they are trying to imitate is actually hot coco, or "hot chocolate"

Surprizingly in India, people look at the person who is handling the food first, this guy is well dressed when compared to other street vendors. So, it is taken as granted that the food that he handles also is good.

dirty preparation method will only lead to dirty/contaminated food. the people's mindset has got to change from stall owner to the buyer. no matter how delicious it is, I sure heck ain't going to get a cup from there heck no ! but it's nice to see the process of making masala chai, that i'll give you.

What I love about the Indian culture is that they actually bring COLOR and FLAVOR to things in life. Tea in general is bland and boring. Tea in India is fucking flavorful and amazing! The food is the same - flavorful, spicy, etc.

Masala chai might be good and have its place I never tried much of it yet I have observed that in the tea world there is a movement away from chai which is considered inferior in the tea tasting world towards green tea and orthodox estate black teas (among India teas) and towards green, oolong, specialty black(red) China teas, puerh and black tea from Nepal. Estate tea from Assam, Ceylon and Darjeeling (green or high end orthodox black) makes chai look low and unprofessional or that one does not know tea. There has been a movement towards teas that are highly subtle from somewhere. I am not saying it cannot be made economical, good and well or Im not telling you its inferior although that is the opinion of 95% websites or talks that cover the topic of tea. Read about India tea they always say green tea (less originally exported from there) is good, orthodox estate black tea has a high end revival and masala chai is inferior. Although maybe you are right and it isn't bland at all. I tried estate teas from India that I like and I drink estates to taste but a milky chai I would make here and there with the dust the way they used it up in India just for pure fun.

JB 6000 buddy, a billion Indians ( with a few exceptions) don't have a F about pseudo tea experts and portals ; and whatever their opinions are. We only concern ourselves with the price and taste. And Puerh, you really want to tell me that people are willing to boil it once, discard the water and start again? Where may I ask?

It's not only masala chai in India. The Pakistanis in India simply do milk and tea with no masala and it's an amazing flavor. Not sure how they do it but they're magicians!

many questions on hygienic measurement, I can tell you that water was over 100degree C. You may try at home cook water at the same heat level, I am sure no one bacteria survives,

It look unsanitary, but all the germs/bacteria is killed off in the boiling process. I sort of see the methods used in making this tea. Looks like it's a concentrated flavour in the boiling process compared to Hong Kong style tea.

No. If it's something that's heated to a high temperature, you're fine. Heat kills any potential bacteria.
