This spicy chicken dish is real Sumatran Padang food from the Minangkabau. By adding a lot of chilies, the dish has a longer shelf life and was perfect for the Minangkabau, the Sumatra population, as they did not have a refrigerator and had to deal with high outside temperature and humidity in Indonesia. The excessive use of peppers in Indonesia still has that function. It keeps food fresh for longer and kills bacteria.
The Ayam Blado in this recipe is inspired by the original Dendeng Blado. Ayam means chicken in Indonesian, Dendeng means beef, and blado or balado means spicy.
So Dendeng Blado is spicy beef. This dish is much more laborious as the beef first has to stew for a few hours and then it is further processed by cutting and deep-frying flat pieces of meat. The chicken dish Ayam Blado is just as tasty and ready a lot faster. You could even make this during the week when you come back from work in the evening.
