If you’re looking for mince turkey recipe ideas then you’ve come to the right place. This is my super easy recipe for Sempol Ayam which is a crispy Indonesian mince meat skewer made from chicken and tapioca flour. Instead of minced chicken, however, I’ll be using mince turkey as it seems far more ubiquitous in my local supermarkets than mince chicken. However, the recipe works just as well with either chicken or turkey.
Ingredients
01. 500 gm minced chicken/turkey
02. 250 gm tapioca flour
03. 3 shallots
04. 2-4 garlic cloves
05. 4 spring onions

07. 2 eggs
08. breadcrumbs
09. 1 tsp salt
10. 1-2 tsp sugar
11. ½-1 tsp white pepper
12. 1 tbsp fried shallots

Sempol Ayam is not as well known in the West as other Southeast Asian dishes but it is a popular street-food snack in Indonesian. The tapioca flour (or “starch” as it’s sometimes called) gives the skewer a satisfyingly chewy texture while the deep-fried breadcrumb coating is nice and crispy.
Sempol Ayam should be better known in the West because not only is it a great snack, it is an extremely handy recipe to have for parties and large gatherings because you can make them in bulk and in advance. The turkey or chicken skewers are pre-cooked by being boiled in hot water first before being coated in egg and breadcrumbs. At that stage, they can be kept in the refrigerator for quite a few days until you are ready to serve them. Simply deep-fry the chicken skewers in oil until they are lightly golden brown before serving them.
For a healthier version, I’m going to air-fry my turkey skewers in my Gourmia Air Fryer. Nowadays, I generally prefer using the air fryer because there is less waste and less mess.
I was able to get all the ingredients for these tasty and crispy turkey skewers from my local supermarket apart from tapioca flour which I got from my local oriental supermarket. However, tapioca flour is widely available, especially from health food shops because tapioca flour is gluten-free. It is also easily available online from Amazon and eBay.
