3:45 - fish heads sold separately. In Guangdong they make a soup with some Chinese herbs and the fish head. It is said to cure headache. 3:50 - that's called Softshell turtles. In Shanghai and Jiangsu province, what they do is steam it on top of sticky rice, with ginger、spring onion to take off the fishy smell. Unlike the normal turtle, the shell is soft and edible. 5:30 - In Guangdong we use the carrot to make soup - often 2 red carrots paired with 1 green carrot. 7:50 - that's dried bean curd with spice. 9:45 - In Guandong we cut the dried squid into smaller pieces and use it for cooking soup or steam it with minced pork. 12:00 - it is made from a plant called konjac. Because the texture resembles jellyfish, it is often used to replace jellyfish dishes for vegetarians. 12:20 - that's fried gluten. Anyway, it was fun watching you video and I'm glad you tried different Chinese snacks!

@@NaickKim I am from HK. Yeah, I saw your latest vid. about having to stay quarantined in TW for 14 days. Hope you enjoy your trip in TW, and stay healthy. If you don't have a mask with you, avoid crowded places and cover your nose and mouth with a scarf of something similar to avoid being infected. Wash hands frequently esp. before you eat. Avoid touching or rubbing your nose, eyes, ears before washing your hands. One thing we learned in HK is to cover your toilet with the lid before you flush your toilet. Here in HK we have a couple of infections from people living on diff. floors from the same storey. Reports said the disease might have spread via the toilet when you make the flush, causing a swirl of air surrounding it, carrying tiny contaminated droplets from the toilet bowl to fly and float in the air.

As Chinese, now studying in Australia, I find the vegetables like potato, eggplant are quite big in China while the leaf vegatable is quite small in China, I think that should be the little difference in species of plant. Only genetic modified cotton and papaya are allowed to be plant in China, rice and corn are under experiment, soy bean, corn, cotton, beet and conola oil these 5 GM plant are allowed to be imported into China. Most those need to be weighted snacks are made by soy bean in chilli oil. The dry squid, some people use that for soup, since just need a small part can provide huge umami. Hope tihis can answer some of your questions and Have a nice trip in China~

Hi Naick and Kim, the turtle in the video is a farmed Trionyx sinensis. It is a kind of soft-shelled turtle. Trionyx sinensis becoming a farmed animal in China can be traced to the last Century. In 1975, the queen of the Netherlands needed 2 tons of soft-shelled turtles for a big dinner, and a small town located in Hunan Provience where you have been to provided the turtles to Netherlands. And since then, that small town has started to develop this business. I have read this story from somewhere, I don't know if it is true or not. But i think it is interesting to share.

2:02 Dried salted fish is used quite a lot in different dishes; you need to first chop it up into small parts and then soak them overnight so that they rehydrate. It is then used in stir fry dishes, the most famous one being with bean sprouts. It's a pretty Chinese classic dish. You can also use them in soups, and in all situations where you need a bit of a fishy taste to something. If I'm not wrong, the fish you're holding is not only dried, but also heavily salted.
@NaickKim
@NaickKim 4 жыл бұрын
Oh wow thank you for the info! Yes it looked so white that I think it may have been salted too. I don't think we've had any dishes with that type of dried, salted fish in them but I would like to try one :) does it still taste very salty once it has been rehydrated? I guess so
@AmbientWalking
@AmbientWalking 4 жыл бұрын
@@NaickKim Yes. You can never ever get rid of the salty taste and that's why you never need to add salt to any dish with preserved fish or vegetables or shrimp and the reason why it's used in soup stocks so much is precisely because the combined taste of salt + something else brings a new flavour to the stock.

3:15 - Those crabs came from the ponds around Shanghai、Suzhou、Jiangsu area. Sept and Oct are the best time for such crabs, which another name for it is "Shanghai hairy crabs". Yes, it is quite sad to know they are living, but the truth is you don't purchase once it's dead because it will develop bacteria very quickly and you may get food poisoning easily. So when we purchase these crabs even up to before we cook it, we make sure it is still alive. I know this sounds scary though...

9:35 Dried cuttlefish is commonly used as an ingredient for soup stocks. Basically, you need to chop it up into small strips before adding it to the stock. In Southeast Asia, it is also quite popular as something you would BBQ till it's kinda crispy and you eat it as a snack. You BBQ first and cut it into strips. oh man... it's for keeping them alive. Dead crabs can't be eaten. If you want to store crabs at home for a couple of days (around 3 days) and you don't want to put them in your bathtub , you can tie them up, put them in the refrigerator and cover them with a slightly wet rag (any thin breathable cloth).

I think most vegies and fruits are non GMO products. China only gave GMO licenses to Papaya and Cotton, and imported Soy beans. Although I don't think the carrots you saw were organic. The turtles Chinese would eat are river turtles. In my impression no one eat sea turtles. The chinese believe that it is difficult to tell dead/frozen animals like fish, crabs and turtles are edible or not, so live ones are better choices. I think all those animals come from factories instead of nature.

These tofu and gluten snacks are made to taste like meat flavour, partially because of the lack of meat supply in Chinese history, and also partially to meet the needs of some vegetarians.
