I'm posting this before watching, so apologies if this is already mentioned in the video. There's a very important difference between Japanese and Italian noodles to keep in mind when doing things like this. The Japanese put salt in the noodles. The Italians put salt in the water. If you want to experiment with Japanese noodles this way, never salt the water you cook the noodles in. The resulting dish will be too salty.

I just had Bentilia's Zimmunity pasta and it was the most amazing pasta alternative I've ever tasted, my kids can't even tell that they're eating straight veggies and they thought it was normal pasta. The nutritional value is insane and the label is extremely clean, literally no additives.
