These mixes are perfect for busy mornings, students living in hostels, travellers on the go or anyone who wants to save time and money on breakfast
Plus, you'll learn how to dry your own vegetables to create endless variations of your favorite instant mixes! ️
INSTANT POHA MIX
Ingredients:
•2 cups Thick Poha
•2 tbsp Oil
•1 tsp Mustard Seeds
•1/4 tsp Hing
•1 tsp Saunf (fennel seeds)
•10 to 12 curry leaves
•3 tbsp roasted peanuts (Indian variety is best for this)
•1 tbsp Sugar
•1 tsp Salt
•1 tsp Black Salt
•1/2 tsp Taatri / Citric Acid - this is optional if you can get fresh lemon / lime while making it
•2 Chillies, cut & dried
•1 tsp Grated Ginger , dried
Method:
1. Dry roast poha on a low flame. Remove and set aside to cool.
2. Now, heat oil in a kadhai. Add mustard seeds, fennel seeds, curry leaves, asafoetida, peanuts, turmeric and give a good mix.
3. Add in ginger and chillies, poha, salt, sugar and Citric acid.
4. Mix it all up and set aside to cool.
5. Store in an airtight container.
6. To make the poha, add water until the level slightly lower than the poha & cover it. Leave it for aside 7 to 8 mins and it's ready.
7. Enjoy!
Vishesh Tippani:
Make sure the poha is well roasted
Pre roast the peanuts prior to adding
Store in an air tight container.
INSTANT UPMA MIX
Ingredients:
•2 tbsp Ghee
•1 cup Sooji (pre roasted until fragrant)
•3/4 tsp mustard seeds
•1/2 tsp Urad Dal
•Few Chana Dal
•2 tbsp chopped cashew
•7 to 8 curry leaves
•Dried Onion (1 small)
•1 tsp green chilli (dried)
•1/2 tsp dried grated ginger
•3/4 tsp salt
•1 tsp sugar (optional)
•1 tbsp chopped dried coriander
Method:
1. Heat ghee in a pan and add in mustard seeds, urad dal, chana dal, cashews, curry leaves and roast well on a low flame.
2. Add ginger, chillies, onion and roasted sooji. Give a good mix. Roast for a few mins.
3. Finish with salt and coriander. Remove from flame and set aside to cool.
4. To make upma, add in boiling hot water to the premix. Stir the contents well and cover and set aside for 7-8 mins.
5. Enjoy!
Vishesh Tippani:
Add the dried onion and immediately add sooji. Onion can otherwise get burnt. Or add it last to avoid burning.
Just make sure the sooji is well roasted when added to ghee & masalas. This is an important step.
Cool the mix & store in an air tight container
If you take 1/2 cup Upma Mix, add a little more than double of the mark of upma level. You can add more to make it a little more moist or as you like.
The water has to be boiling & ensure to cover it immediately.
INSTANT VERMICELLI UPMA MIX
Ingredients:
•2 tbsp Oil
•1/2 tsp Mustard Seeds
•7-8 curry leaves
•8-10 cashew
•2 tbsp Peanuts
•1 tsp Urad Dal
•1 & 1/2 cup Vermicelli
•2 tsp Sugar
•1 tsp Salt
•1/2 tsp Taatri (Citric Acid) - you can also later add fresh lime juice
•2 tbsp Dried Onion (Dried in sun )
•2 tbsp Dried Carrots
•1 tbsp Dried Coriander
•1 tsp Dried Chilli
•1 tsp Dried Ginger
Method:
1. Heat oil in pan, add mustard seeds, curry leaves, urad dal, cashews, peanuts and vermicelli.
2. Roast on a low flame until it turns brown.
3. Remove, cool and add salt, sugar, citric acid, dried veggies. Mix well.
4. Store in an airtight container.
5. To make the vermicelli upma, just add boiling hot water until the top of the premix.
6. Cover and leave for 10 mins and enjoy!
Vishesh Tippani:
Make sure the vermicelli is roasted well in oil. Else it will become mushy when water is added
Cool it down before adding dry ingredients
You can store this in the fridge. I recommend you remove the quantity you need a few mins prior for it to come to room temperature.
At room temperature also, it will last fine but until a month.
While making the upma, make sure the water is boiling hot. It should be bubbling in the kettle.

Recipe continued in comments: INSTANT SAMBHAR MIX Ingredients: •1 cup Toor Dal •4 - 5 Dried Red Chillies •8 -10 Curry Leaves •3 tbsp Coriander Seeds •2 tsp Cumin Seeds •1 tbsp Chana Dal •1 Lime sized ball of dry tamarind •Salt + Black Salt •Jaggery, optional For Tadka- •1 tbsp Oil •1/2 tsp Hing •1 tsp Mustard Seeds •10 to 12 Curry Leaves •Few Whole Red Chillies For Sambar: •2 tsp Oil •10 -12 Shallots •1 Large Tomato •1 cup Veggies (I used pumpkin & drumsticks) •750 ml Water •3 big spoons of Sambar mix •Some chopped Coriander •Salt, as required Method: 1. Dry roast toor dal on a low flame until it is fragrant. Add all the other ingredients except jaggery and roast them too. 2. Remove, cool and grind into a powder. 3. Now, for the tadka, add oil, hing, jeera, curry leaves and chillies. Once they splutter, add the ground sambar mix and turn off the flame. 4. Cool, mix in jaggery and in an airtight container. 5. To make the sambar, heat oil, add in shallots, tomatoes and saute well. Add all the other veggies and water. Give a good mix and add the sambar mix. 6. Cook for 7-8 mins, finish with coriander leaves and enjoy with idlis, dosas or as you like. 7. Enjoy! Vishesh Tippani: You can wash & dry the dal a day prior if you’d like Dry roast the dal until fragrant & aromatic Dry roast all the ingredients until chillies & curry leaves are crisp & brittle Cool the mix before grinding & filling in the jar INSTANT PEANUT CHUTNEY MIX Ingredients: •1 cup Daalia (roasted gram) •1/2 cup Peanuts (lightly roasted to remove skin) •4 -5 Kashmiri Red Chillies •1 Small Piece of Dry tamarind •1/2 tsp Coriander Seeds •5 - 6 Curry leaves •1/4 tsp Hing •3 to 4 Black Peppercorns •Salt & Black Salt •1 tsp Sugar is optional Tadka, optional: •1 tsp oil •5 to 6 curry leaves •1 chilli cut into pieces •1/2 tsp Mustard Seeds Method: 1. Dry roast daalia & peanuts well until fragrant. Keep the flame low. 2. Add all other ingredients except salt and sugar and roast until they are fragrant and the chillies and curry leaves are crispy & dry. Then, add in salt and sugar. Mix well. 3. Remove and cool the mixture before grinding. 4. Grind into a fine powder. Add tadka to this. 5. For the tadka, heat oil and add the mustard seeds. Once it crackles, add curry leaves, chillies and pour this on to the chutney mix. 6. Combine it well and store in an air tight container. 7. To make the chutney, simply add water to this and its ready in no time! 8. Tastes best when served with Idli , Dosa , Uttapam or just on some khakhra too. 9. You can serve it with multiple snacks. 10. Enjoy!

Recipe continued in comments: INSTANT GREEN CHUTNEY MIX Ingredients : •1/2 cup Coriander (washed & dried on a cloth to remove excess water) •8-10 Mint (washed & dried on a cloth to remove excess water) •3-4 Curry Leaves •3-4 Green Chilli (we need it a little spicy) •Ginger •2 Pinches Hing •1/2 tsp Amchoor Powder •1/2 tsp Jeera powder •1/2 tsp Black Salt •1 tsp Salt •1/2 lime Juice or 1/4 tsp Citric Acid - Citric acid helps preserve longer. •2/3 cup Daalia / Roasted Gram •Chaat Masala •1/4 tsp Turmeric Powder (optional) Method: 1. Blend it without any water & store in an air tight container. 2. Store in the fridge only. It will stay well at room temperature for just 6 to 7 days Vishesh Tippani: Make sure all ingredients are washed & dried on a cloth. Even better if you have a vegetable spinner / drier. This is extremely important so that additional water / moisture isn’t added to the mix while grinding Skip the fresh lime juice in the mix & add it freshly when adding water to ensure it doesn’t turn wet. You can increase the shelf life of this one by simply sun drying it for a day & store it up to 1 month at room temperature. Just like that, you can store this in the fridge upto 2 weeks or a few days at room temperature. INSTANT RAVA IDLI MIX Ingredients: •2 tsp Oil •1/2 tsp Mustard Seeds •1/4 tsp Hing •8 to 10 Curry Leaves •1/2 tsp Urad Dal •1/2 tsp Chana Dal •2 tbsp Chopped Cashew •1 cup Roasted Sooji / Rawa •1/4 tsp Haldi Powder •Salt & Black Salt •1 tsp Dried Green Chilli •1 tsp Dried Ginger •1 tbsp Dried Carrot •1 tbsp Dried Coriander To make Idlis- •1 cup Mix will need 1 cup Water (Some more to adjust the consistency) •2 tbsp Sour Dahi •1 tsp Eno Fruit Salt Method: 1. Heat oil in a pan, add in hing, mustard seeds, curry leaves, urad dal, chana dal, cashews and roast them. 2. Mix in roasted sooji and roast again. Then, add in salt, turmeric powder and dried veggies. 3. Remove and cool. Store in an airtight container. 4. To make the idlis, combine premix, water and sour curd. 5. Cover and set aside for 10 mins. Then, adjust the consistency with water, add in eno and mix well in one direction. 6. Pour small portions into the idli moulds and steam on high flame in a pre heated steamer for 12 to 13 mins 7. Cool it slightly, unmould it & serve HOT with sambar or chutney of your choice. 8. Enjoy! Vishesh Tippani: Dry roast the sooji until slightly fragrant Cool the mix before putting in a jar Add dried veggies, check out my reel to dry veggies

This time can vary depending on the cut , size , etc. it can take upto 2 hours at low temperature in the oven.. Sometimes even longer. It should feel dry
