This Instant Hummus In A Jar pressure canning recipe has become a go to for us. It's something that I am reaching for weekly off of the pantry shelf. Today we are canning up 3 variations - Roasted Garlic Hummus, Roasted Red Pepper Hummus and Jalapeño Hummus. This hummus recipe makes for a great easy appetizer or healthy snack.
Please note this is NOT a tested and approved recipe. I feel comfortable canning this. If you are not comfortable canning with sesame seeds, feel free to omit them and add them in at the time of serving. I was able to find a tested and approved recipe using sesame seeds, however they use significantly less and it is a pickling recipe. It is linked below if you'd like to review it.

Instant Hummus In A Jar Recipe:
Prep your chickpeas/garbanzo beans by soaking overnight. Alternatively you can bring your chickpeas to a boil for 2 minutes, turn off the heat, and allow them to sit for an hour. Drain off the water and rinse well. Add the chickpeas back to the pot with 1 quart of water per pound of chickpeas. For 6 pints you will need 1 pound of chickpeas. I did 12 pints, so I used 2 pounds of chickpeas. Divide the chickpeas evenly among hot, clean jars. Add in your flavorings as listed below, and top off with hot water to 1 inch of headspace. Debubble, adjust headspace, and add lids fingertip tight. Process pints in a pressure canner for 75 minutes.
To Serve:
Drain off some of the liquid and set it aside. Add the contents of the jar to a blender or food processor with 2 tbsp of olive oil. Add liquid until the desired consistency is reached. If you choose to omit the sesame seeds during canning, add 1/4 cup of toasted sesame seeds now or 2 tbsp tahini.
Roasted Garlic Hummus
Per Pint:
4 cloves roasted garlic
1/4 cup sesame seeds
3 tbsp lemon juice
1/4 tsp salt
Roasted Red Pepper Hummus
Per Pint:
4 cloves garlic
1/2 roasted red pepper or 2 slices
1/4 cup sesame seeds
3 tbsp lemon juice
1/4 tsp salt
1/4 tsp smoked paprika
Jalapeno Hummus
Per Pint:
4 cloves garlic
1/3 cup pickled jalapenos
1/4 cup sesame seeds
3 tbsp lemon juice
1/4 tsp salt
1/4 tsp cumin

I like your channel, you can things I haven’t seen anyone else can, you don’t keep us for an exceptionally long time, you spew facts and tell people when it isn’t approved. Most of all I like the colors and warmth in all of your videos. I know nothing about editing but everyone takes the crisp white, airy approach. Yours is more moody with personality. You beat to your own drum and aren’t following the pack, I think that’s cool. Hopefully this channel takes off in a massive way for you!

Just find this video and so excited for these recipes. Store bought hummus contains allergens for me so, I have to make it homemade allowing it to be perfect for me. I will be purchasing an electric canner soon and I will definitely be add instant hummus in a jar to my canning list! So thank you for the inspiration! 🦋

okay... you guys! if your wondering if making this recipe is worth it, I'm here to say a resounding YES! I canned the roasted garlic chickpeas just as it's described in the text, and it is DIVINE. hands down the best hummus I think I've ever eaten! I made sure to put in the extra effort and use freshly-squeezed lemon juice (no bottled stuff) and opted to NOT can the sesame seeds. I added a tablespoon of good olive oil, a tablespoon of tahini, and drained only about half of the aqua faba (canned chickpea juice/water) and blended it up and man.... it's absolutely delicious!

I’m new to canning at almost 62 and so new I haven’t tried one recipe but this hummus will be my first. I appreciate you informing us that recipes aren’t tried true Ball recipes but the ingredients are, as most KZfaq influencers do not share this type of information but instead choose to do rebel unsafe canning for views. I’m so glad I discovered your channel and know that you have won me over as a subscriber.❤

This was soooo good!!! We had a big family cookout today so I thought I would take the roasted red pepper hummus and jalapeno hummus and see what the "food snobs" in the family thought. ; ) They raved about it! Especially the jalapeno. My 91 year old daddy didn't even know what he was eating -- we didn't tell him it was beans LOL -- he really liked the jalapeno and ate every bite on his plate. It is super quick and super easy! I didn't put the sesame seeds in the jars but did add the 2 T of tahini and olive oil. Thank you so much for your recipes!

OMG I love hummus. I have had some really good store bought. I do prefer my own but never thought about pressure canning it. I can not wait to try this. No one else in the house likes it so YAY more for me. I will try a few of each as there is no way I could pick just one. Thank you Abbey

I can garbanzo beans to make hummus but have never seen that recipe, to have it all ready to go. I love that you use toasted sesame seed also, the tahini is too high in sodium for me due to blood pressure issues. I'll have to look up sodium in the sesame seeds but something tells me it will be way less. Thank you so much for sharing this.

I do similar but I add the sesame seeds and garlic and oil since there is no approved time for canning garlic (other than in a tested recipe), I did not care for the taste of the seeds after canning and of course the oil is not recommended for canning either. But it is nice to have the flavours ready to whip up at opening and just toss in the extra bits. Tfs

Thank you for the recipe! My finished jars soaked up alot of liquid and looks kind of like gel? Is that normal? I didn’t tip them side to side but I don’t see a whole lot liquid.

Having trouble finding dried garbanzo beans in my area. Since you have to cook them anyway, could you use canned and rinsed garbanzo beans? 🧐

I wouldn’t. They aren’t fully cooked when you prep them so they may just disintegrate through the pressure canning process

@@abbeyveriginthanks! Roasted some fresh red peppers tonight and FINALLY found dried garbanzo beans locally so will pick up tomorrow. Looking forward to it. I’ll be doing half pints because I’m one person and my 70+ mom doesn’t care for it. 😂. More for me! Also decided to skip the sesame seeds only because I have tahini in the fridge I need to use up anyway. 😉. Chickpeas soaking overnight now and roasted red pepper ready to go. Yum 😋

My beans soaked up all the water before I realized it. So some of them kind of started to sprout. I still canned them, but do you know if this could be a problem?

I may have missed it. When you go to blend up the hummus later, you mentioned draining off the liquid and then slowly adding back. What's your estimate on how much liquid you don't add back. Does a pint jar of hummus ingredients turn into a pint of hummus? I'm trying to estimate some nutritional values before i decide whether to make it, and I'm not sure how much finished hummus you end up with.

It really just depends on the consistency of hummus you like. For trying to estimate nutritional values, I would estimate it based on all ingredients you add to the jar plus the olive oil you’d add when blending. I wouldn’t adjust for how much liquid you don’t end up using so you’ve got some flexibility. I hope that makes sense. I’d say after blending it’s probably closer to 3/4 pint

She soaked overnight, drained them, then added 2 quarts fresh water and cooked for 30 minutes. Then drain and add in jar with the rest of the ingredients.

in your video, you say to add 1 tsp of salt to each jar but in the directions, it says 1/4 tsp. Which do you do? Thanks!

Love these recipes, I can all my chick peas and dry beans 🫘. I usually remove the skins of the chicks peas before putting them in the food processor, without removing it how's the consistency of the hummus?

I have removed the skins before and I honestly don’t find much of a difference. This makes a very smooth hummus!
