By preparing birria in the instant pot you can enjoy your birria in as little as two hours compared to the 3-4 hours it usually takes making when making it the traditional way.
Ingredients:
• 5 Lbs a Chuck Roast
• Beef Shank or Short Ribs
• 8 Chile Guajillo
• 2 Chile Anchos
• 10-12 Chiles de Arbol (optional)
• 1 Medium White Onion
• 1 Head of Garlic
• 1 Tbsp Mexican Oregano
• 1 Tsp Coriander Seeds
• 1 Tsp Cumin
• 1 Tsp Peppercorns
• 1 Tsp Ground Cinnamon or Half a Stick
• 1/3 Cup Apple Coder Vinegar
• 1/2 Tbsp Salt
• 1/2 Tbsp Black Pepper
• 2 Tbsp Manteca/Lard
• 3 Bay Leaves
• 6-8 Cups of Beef Broth
