I've only had the TP620 about a week, however I am cooking on the Blackstone nightly. So far I am having mixed results. It does help me make a better steak/chicken, however I find myself watching and waiting for the final temp after inserting the thermometer. The claim is 2-3 seconds, but I believe it is more like 6 or 8. I know, still better than old school analog, however I lose confidence since I can watch it climb until it finally stops 5-6 seconds later, even longer. I do like the large digital reader and it works well until you get that angle where reflection voids it. Seems like an unreasonable complaint on the surface, but when you are trying to position thermometer and holding for 5 or more seconds over a 36" griddle, it can be annoying. I paid $29, so while I think it is par for the course at that price point, the normal price of $50 is not even close. So, while I probably will keep it, I imagine my frustration me to search for a better primary. So, save money where it makes sense; I am not sure this is it...

I just got the thermo pro TP610. It has a recharging port and a probe extension to also be able to put into ur meat on ur grill or oven to monitor ur meat as it cooks. And I only paid 24$ on sale on Amazon about a month ago. Love the no battery feature

These are fun. I'm not sure how Thermapen can get by with claiming one second or less. That said, mine has been extremely accurate and durable over the years.

Themapen literaly claims "Thermapen ONE will read to within 1°F of the actual temperature of an ice bath within one second". They also claim an accuracy of "±0.5°F" at that temperature range. This means they only need to produce a reading of 33.5 (in a proper ice bath) within 1 second to meet their actual claim(s). Additionally it does take a very minor messure of time for the bath in direct contact with the prope to dissipate the thermal energy introduced by the probe itself. This is so minute as to be virtually irrelevant IMO, but it is a reality none the less. Even taking these things into consideration it seems, to me, that this particular Thermapen ONE may be performing poorly compared to others, and specification.

If the probe is touching the ice floating in the water, the temp is going to be 32. It might be more meaningful as to the accuracy of the thermometers to test really cold water, with no ice.
