John Fontenot has been a waiter at Galatoire's in New Orlenas since 1967.
He is from Cajun country and spoke French before English. He still has an accent. If you ask him why he stays in job, he'll tell you that it's because he likes people. Even if they don't like him.
The waiters at Galatoire's, a French Creole bistro on Bourbon Street, have a special relationship with their customers. The regulars have their own waiters and ask for them by name. And the waiters often know the regulars' orders by heart.
In 2017, Galatoire's was nominated for a James Beard Award for outstanding service. In 2005, it won the James Beard Award for outstanding restaurant in the nation.
