I'm a huge fan of "Super-Spicy" food as well as foods with Lots of Garlic. So that "Garlic Heavy" dish sounds delicious to me. BUT, HELL NO TO EATING BUG!!!!! You can use certain Vinegars in place of certain Alcohols or "None-Alcoholic Beer" in cases that call for regular Beer. For example, if it calls for Red Wine can use "Red Wine Vinegar" or "Apple Cider Vinegar".

4:00 That’s Pike’s Purple Jewel Cake! From Narrative Telephone! Context: Narrative Telephone is a miniseries CR put out during quarantine in which one cast of Critical Role makes up a story for the rest to retell through memory, Telephone style. In one episode Ashley through Pike’s voice tells the story behind the “Purple Jewel Cake” where a haughty noble got half of a monkey’s paw wish and was turned into a purple gem. Pike never gave the recipe of the actual cake tho, so I’m excited it’s finally time!!!

The recipe you opened "Scaldseat Salmon" is the first one I tried cooking. It's really good. Following the directions, it turned out really good, but it didn't get much flavor from the marinade. I doubled it and reserved half for a dipping sauce. You're right, it could have used chapter TOCs. I'm ok with the organization by continent though. Yes it's a cookbook, but it's also a story. If it were strictly a cookbook, I would say that it should be laid out like you suggest. But for the story they're telling, this makes more sense. And as a collector of fandom cookbooks, many of them are laid out similarly by theme rather than by dish style for similar reason. Agreed about the non-alcoholic substitutes, that would have been nice.

the de rolos revenge pasta just sounds like my normal pasta recipe.. also if a recipe says 5 cloves of garlic i usually use 10, because most people just don't seem to know how to use garlic and only use a tiny amount. like if you put garlic in you put enough in so you can actually taste it, if you don't put enough in you might as well have saved yourself the trouble of putting any garlic in. this book at least seems to know how it is used.

I feel like even if they kept things divided by region, they still could've had an actual theme with the food. For example, in the Avatar Cookbook they have Air (vegetarian), Water (seafood), Earth (Misc.), Jasmine Dragon (tea), and Fire (spicy). And in Heroes' Feast, there's Human (normal stuff), Elf (healthy crap), Dwarves (heartier fair), Halflings (comfort food), Uncommon (quirky appetizers and whatnot), and Potions (drinks). Maybe it still has something like that and I just can't see it, but it seems kind dumb to be 100% all over the place.

From what I’ve read they seem to be more based off of real world cuisines. Off the top of my head, Xhorhas has taken inspiration from both East Asian cuisine and Russian cuisine, just as an example. They’re not really trying to fit themes, they’re trying to create impressions of well rounded cuisines, like real cultures have. It’s not all gonna be one thing, like healthy, or vegetarian, or whatever. I get that to the average reader that might not make sense, but this book is more for their fans than anything else. I do agree that the individual chapters should’ve had Tables of Contents though, that’s a real oversight.

About the alcohol: It isn't a problem if you boil or fry it since any alcohol will disappear as soon as you heat it up, you want be eating any alcohol that way but a lot of old timey recipes used wine as a flavor. Yeah, you could replace it with none alcoholic wine (or beer for the once using that instead) or you could just use grape juice if you can find any with no added sugar (but I don't really recommend the last, it will taste differently). Etanol boils at a lower temperature then water so with anything over 78 C it will quickly boil away, I guess you might want to avoid inhaling the steam. It is more problematic in things like deserts and ice cream but it isn't that hard to find a none alcoholic variant at your local store. Wine do have a very special taste that goes very well with meat so just omitting it isn't good. You have to consider each dish if the alcohol will boil away or not, you basically need a minute near boiling and it is 100% gone if you want to use a cheap wine (the none alcoholic tends to be more expensive). It is still way easier then if you are vegetarian for instance, getting the right taste and texture of a meat dish without meat is far harder. I don't think they actually needs to add none alcoholic alternatives in every dish but they probably should had included a page on the topic since some people do avoid alcohol and it isn't something rare or unusual.

There's probably a recovering alcoholic type of situation going on, with how he doesn't want to bring alcohol into the house. It's the avoidance of the presence of alcohol, instead of the possibility of alcohol in the dish.
@loke6664
@loke6664 10 ай бұрын
@@EelcoPeterzen That is a good point, if having the tiniest wine bottle you can find at home is a problem then the none alcoholic wine is the best choice. There are different reasons for people avoiding alcohol so everyone will have to do what works for them. It is a bit more expensive to buy none alcoholic cooking wine but I think that is the best replacement in that case because you can screw up the dish if you add something with a too different taste profile. My mom for instance don't drink alcohol at all, it hits here really bad so she avoids it for that reason but I know former alcoholics, people who don't touch it for religious reasons and people who just decided to avoid it for reasons only themselves know. And I certainly do not judge anyone either, you just have to do what works for you and there are good replacements for almost any kind of alcohol (I don't really believe in that expensive Californian none alcoholic vodka though, I can buy Whiskey and gin replacement but vodka is just silly).

I admit I don't know if there are any better replacement then grape juice on the market there, there probably are something but I am no Doctor and don't know his exact medical issue. You should probably talk to an expert there, just use grape juice or avoid those dishes. It is not worth getting sick for a cool dinner.

This does look interesting. As to being an amateur cook - keep making your cooking videos, and you're going to get really good at it. It's always hard at the beginning as a cook, there's a lot of skills to learn, a lot of methods to gain an understanding of. However, once you have those down, most recipes become easy (with the exception of very complex recipes requiring multiple things on the go at once - in those cases, my suspicion is that the recipe was designed for a restaurant kitchen with multiple chefs, not for a home kitchen), and you can really start to play in the kitchen. My big bugbear is poached eggs. I've never managed to do them successfully, despite trying many tips and tricks, but I'm going to keep trying until I get it right.

No, those items haven't been released to the public yet. They seem to have sent them to anyone who got a gift advance copy of the cookbook.

I also don't cook with alcohol. A couple of suggestions for alternatives (at least for wine don't it shows up the most). If it is a savory dish calling for red wine use beef stock. If it is a sweet dish calling for red wine use grape juice. If it is a savory dish calling for white wine use chicken or vegetable stock. If it is a sweet dish calling for white wine use white grape juice. Other types of alcohol I typically look up substitues online (or leave it out and roll the dice on the dish not working). If the type of alcohol is the main flavor (eg. rum cake) I just don't make it.

- 1st things 1st - I know this is CR, but as a D20 junkie, I love the BLeeM shoutout, & it's hilarious to me that A) YES HOLY CRAP that character looks like him, hair flip & all, and B) said character is eating/about to eat. 😂😂😂 - Having said that... honestly excellent first review Duke! I fully agree with your notes for the book, particularly about the table of contents and alcohol options/alternatives. It would also be great to have a glossary that listed all recipes that contain no alcohol (and/or ones where it's optional). - One minor suggestion I have for your future reviews (if you're interested, it's really minor) is that I'd love to hear more in your conclusion; the rating is good, but I'd be interested in more of your thoughts. I won't go into more detail 'cause I don't want a page-long comment 😅, but I can be more specific if asked.

You can do an internet search and find suitable cooking alcohol substitutes. The main question is what is the alcohol being used for. If it is used as a meat tenderizer or marinade try soda, sparkling juice, an acidic fruit juice or vinegar. If it is used to flavor the food there's a whole list of possibilities depending on the kind of alcohol. If it is used as yeast content, in an alcoholic beverage, or to make flambé your best bet is to find another recipe.

I'll say its not nit-picky with the table of contents. Its incredibly helpful in any book, ESPECIALY a cookbook. I also agree about non-alcoholic recipes. I don't usually cook with alcohol either, nor do my hubby any I drink alot... and above all, I usually make these dishes for my whole family. I know that alcohol burns off and leaves the flavor, but I'd rather not cook with alcohol in the first place, especially to feed to my kids.

It is a big reason I avoid cooking with alcohol. I know there is plenty of kids that are amazing that cook with the stuff as well. But I'd just rather not have it in the house because it is a waste of space for something I might use once and will never touch it again.

@@iceman3317 Exactly! My husband is a chef so before I make anything, I'll usually ask him if it'll work without the alcohol. Otherwise I just ignore the presence of alcohol, or -more commonly- I just don't make the recipe, cause I'm not going out of my way for it.
