I just picked one up at a on line yard sale. After using it for the first time today, I'd do two things next time: soak the disk in warm water and spray it with oil. The pasta should come out beautiful from the start. I love my $100 deal.

stuart taylor She’s a chef and, I believe, a restaurant owner. She just tries to follow the devices instructions as they are given and not add her culinary expertise unless it can’t possibly work without it. If something says it can compete with a chef, or better than homemade, it shouldn’t require you to know the best way to do it, because if you knew better, you’d just do it by hand and save money

If you let the machine run through the full cycle it will grab the remain bits of dough. You’ll jam the extractor if you jam the remaining dough into it. The only thing I do is open the cover when there’s 3 minutes remaining and remove the dough stuck on the blades, it’ll then grab the small bits of dough and extract in the last 3 minutes. Also, you need to pour the liquid in slowing into the machine vs a fast pour. The disk should also be attached to the unit before placing the cover on it. There’s a notch that the disk needs to line up and click into before the cover. If you’re going to judge the performance of a machine you need to use it per the manufacturers instructions rather than winging it.

I have had this item for a few years now. Pro Tip (1) If you are not using a pasta flour to make your noodles, I.E. AP flour always add gluten otherwise the noodles will not hold together, and you won't get that nice pasta mouth feel you are accustomed to with normal noodles. I add 1 to 1.5 tsp of gluten add in when I make a 2 cup batch. Pro Tip (2) noodles are ugly at the start and end of the run. I put the pressed noodles right back in until they start looking good. When the run is at the end and the noodles start to look funny I turn it off and discard. You will waste about a 1\4 cup of product but noodles will have much better consistency.
@TheEvilmooseofdoom

On another channel someone said bread flour works better than AP.. If you have the urge to experiment I'd like to hear the results. I'm on the fence about an automatic maker, I have always made by hand in the past resting my dough for 90 mins before putting through the hand crank. In my new place I can't clamp my crank down due to the design of the counter top which is why I was looking at the automatics.

For your ramen noodles you will find a huge difference if you use baked baking soda - I bake quite a bit and then it is perfect in an air tight container for later use. I have the original machine and love it. I do adjust the amount of water because it really depends on the weather as to how much liquid is needed.

Hey great video. I just bought one for Christmas - it's still basically the same unit. The best part was a comment about a different pasta dough recipe wouldn't work with this unit. I was making it too wet and it was a disaster. That and I watched a bunch of other videos and you were the only one who experienced the same thing I did which is that some of the damned dough is just going to bounce around and not get pushed through so you need to have a littel human intervention. You need to turn the cutter around the other way also, as you're cutting with the flow of the pasta being extruded, instead of against it. I've had the model above this one the automatically weighs how much liquid you need to flour for over 2 years now, awesome machine and from what other people are saying (I'll agree with here) the first 5-10cm cut off and put back into the machine to allow this to be reincorporated. Also, it's not meant to be a dough, it's suppose to be a damp crumbly mix, as the pressure through the die will force the mix to compress and hold it's shape. There shouldn't be that much dough left in your machine. Using a spice grinder to grind up your own spices into the flour is great, different vegetable juices also are amazing as well. TIP - using an egg in most noodle recipes if you're not using semolina flour and want an eggless flour, and definitely a teaspoon of vegetable oil will also give you amazingly smooth pasta, and noodles as well (garlic oil is my fave) Running the machine through an additional extrusion cycle, if there's still dough in the machine, will help ensure all the dough is used.

Wife and I have one. Clean up is not too bad. Basically scrape the left over dough off, run the pieces under the sink, and into the dishwasher. If its too terribly inside any of the extrusion heads, they go into the freezer and then the left over dough can be broken off easily. Several of the different extrusion heads also have plastic moldings that have matching pins that push the dough out of the holes backwards. Maybe a 5 minute clean up, usually while the pasta is cooking. We don't regret the purchase at all.

It’s easier cleanup than making fresh dough by hand by a long shot. I just let the pasta bits dry and then they become easy to wash out. The dough scraper thingie also has metal prongs on the end you use to pick out any stubborn dough from the discs. By contrast, I end up with flour all over my kitchen when I mix, knead and roll sheets of pasta by hand. This isn’t perfect; it’s annoying to make large batches (at least my version only allows for 2 cups of flour at a time), and the first pasta pieces that are extruded are usually pretty manky. I throw them out. But overall, it’s fun to use, easy to clean, less messy and involved than making by hand, and the fresh pasta cooks in a minute or two. I’d recommend only it if you are a small family and really prefer fresh pasta. I’m happy with it.

I found making the dough in my kitchenaid works much better. I use this to extrude only. Its important to get the mix right if your using semolina. Piss poor design.....the auger should be recessed in a channel on the bottom. The way its raised means you have unextruded dough left over in the machine. But that being said......it works great.

The reason that the extrusions are better Katerina on in the batch is because the die heats up from the friction of the dough. Try placing the die in water and slowly heating the water. Also, home extruder which use brass dies are much better. If you are willing to make the investment, try the Bottene Lillo Due high-end home extruder. It is worth the investment. It comes with four bronze dies, but you can buy additional bronze dies for various shapes.

Even many of the smaller scale industrial grade pasta makers do not have that option. It is most likely very expensive to add to a machine. Honestly it makes sense not to have that feature. People prefer their pasta different lengths sometimes. It only makes sense for massive pasta extruders due to the quantity of pasta being made. Since this is such a quick process it would not make sense.

Hell yeah, and I love AC!!!! I'm about 130 hours in on Valhalla, I keep getting killed by the drunken bear, I'm at level 260 maybe I should hit 280 or higher and come back. I've played every single one except revelations, and liberation.

Tip: You can make your alkaline noodles by simply adding baking soda. Like a teaspoon per cup or so

Can it handle using a variety of different grains and flours? Does it work well with gluten free flour without getting stuck or blocked? How about buckwheat or amaranth or other flours? Anyone have any experience with this? Thanks in advance.

Can you boil pasta immediately after they come out of the pasta maker or do you need to let them dry first?

I boil mine directly out of the machine. No drying needed, unless you want to store your pasta for some reason.

I wonder if the machine would work with alkaline water for ramen noodles or if the dough would be too tough for the machine to knead.

I thought it was a decent review and Esther did a good job. That background music was kind of annoying though - too loud and obtrusive.

I let the machine kneads an additional 2-3 minutes. The result is firmer / al dente noodle after 3 minutes boiling. Also, I use egg+water instead of just water

With the first few seconds of each pasta that comes out. Cut it off and put back into the machine. Then gets mixed back up and makes good looking pasta then

Do the recipes allow for different types of flour in order to get low carb noodles? Anyone ever made noodles with almond meal, coconut flour, walnut flour etc? I'd buy this yesterday if it can make low carb noodles.
