In Cebu we call this Binignit. Cebu is located in the Philippines, specifically in the Visayas Region. This dish is served every Good Friday on Mahal na Adlaw (which means Holy Week). My lola and mom would make this, and I remember as a kid not liking it, but now, I look forward to every time they would make this. It’s such a heartwarming dish. Reminds me a lot of the good times.

Omg yess always during the holy week!! My fb feed, reels and stories were swamped with binignit during holy week 🤣 no wonder!! It's soo good with "landang", ube, the 2 types of kamote (yellow and purple), bigger sago (diff colors). To make it extra special, my mom adds jack fruit and shredded buko meat 😋 yumm

I would highly suggest that u Use red/black glutinous rice instead of tapioca pearls. It has more depth in flavor. Woody, earthy, and nutty. Plus it adds texture as you try to chew the bits of grains. It's longer to cook, tho. Best cooked in open fire with mangrove fire wood, charcoal works, too. Mangrove imparts a smoky flavor.

This video affirmed Indonesia and the Philippines' cultures' similarities. In Indonesia, we have similar desserts and it's called 'Kolak'. We use bananas, and brown sugar to give the brown color and put in a lot of condiments. Sometimes we put similar to Mochi called 'candil' or putting Ube to give purple color. Depending on the mood or households' recipes what they want to put in the coconut milk. And that was so good!

It's guintaang HALO-HALO, 'cause it's a mixture of ingredients in gata (coconut milk). "halo" is tagalog for mix. "bilo-bilo" is the sticky rice (like mochi), so guinataang bilo-bilo is simply coconut milk and the sticky rice balls, that's it.
