Agreed to the entire message that you have given through your video. But I WOULD LIKE YO DISAGREE ON THE POINT RELATED TO THE CHOPPING BOARD. Chopping boards can not be of stainless steel, for a fact none of the restaurant uses stainless steel chopping board as it hampers the edge of the knife. Chopping boards are made up of food grade plastics which are colour coded, green for vegetable, Red for raw meet, yellow for cooked meat, white for dairy & breads, brown for cooked vegetable, blue for seafood. They are scrapped/shaved using a scrapper/shaver every week and washed and stored properly dipped in 100 PPM chlorine solution. I am myself a Chef with the Leading Hotel group of India. So you can trust the information Mr. Bindra.

My only question to you is that please let me know where the trough which gets created in a cutting board goes . Can u assure it does not go in food because after u cut tomato or something , the motion is a dragging motion and my hypothesis is along with tomato plastic also goes in food . You are absolutely right.. i m working in fine dining restaurant. In my restaurant we have everything whatever u said like dishwasher exhaust hood ac fresh air insider very good utensils blast chiller freezers chillers frayer chemicals for the dish glass and floor wood toilet cleaning etc. but one more thing the food price is quite high.
