So I ended up making this roller but a little more versatile. I used bolts, steel brackets, washers and wing nuts to adjust the height. Instead of a PVC pipe I used system that allows the top bracket to be removed and a rolling pin to be inserted and removed for easier cleaning. My stainless steel rolling pin has no flex so the thickness of the dough is always the same. I also cut out a thin stainless steel sheet and glued it to the rolling surface. My device is now 100% food safe and it cost me under $40 AUD to build it. Thanks for the inspiration, I have saved so many hours because of my roller!

My brother wants to start a bakery we were planning to buy a dough sheeter then this popped out. Damn I love you tube. Bakers turned engineers and we not stopping here. Way to go buddy thanks a milli for sharing you are a life saver.

I am curious, when you turn the crank, I understand why the board moves. It looks like the roller also rolls, even when it's not rolling something and doesn't seem to be touching anything. Is it somehow connected to the crank?

Brilliant transit mechanism, but would suggest you clean up the roller before you start manufacturing your patties. You might consider wrapping it in a urethane sheet. I would also add to the travel of your dough. Thanks for sharing this! Doug
