I know that youre thinking of the leitmotif's as "remixes" but its actually a storytelling device in the music. different characters, locations, and events have motifs associated with them. its "renixed" into other tracks to indicate that the thing the music is playing for is relevant to what the leitmotifs are connected to. its actually quite genius as it works as a sort of musical literary device throughout the games plot, foreshadowing future characters and events, showing a different side to existing characters, and clueing you in to whats going on in the plot.

Why it feels like the game ends with music multiple times is because there are different paths in the game. Neutral, Pacifist and Genocide. Each with their own ending and the game encourages you to complete the game in this order after beating each ending. So that’s why there’s 3 pinnacle boss tracks.

That's such an interesting and fun creative journey for a video game to take, to have its characters and setting shaped by its OST and not the other way around. Explains why the vibe is so immaculate, though. It's built on a rocksolid musical foundation. Also, in case you do read this and want a rec, hey, try checking out Kingdom Hearts' soundtracks at some point. Those have some pretty great, emotionally evocative songs as well, and I love seeing people react to them blind.
