蝦醬豬扒有味飯(2人份量)
材料:
急凍梅頭豬扒4塊
雜豆1膠嘜
米2膠嘜
芫荽1棵
蔥1條
薑1小舊
處理:
1. 豬扒,清水解凍。
2. 豬扒解凍後,倒去水分,加入粗鹽半湯匙,乸5分鐘,去除雪味及加入少許鹹味。
3. 豬扒,清水沖洗乾淨,擎乾水。
4. 薑,去皮。
蔥,切去根部。
芫荽,切去根部。
清水洗乾淨。
5. 薑,蘑成蓉。
芫荽及蔥,切碎。
6. 豬扒,用廚紙索乾。
7. 豬扒,用菜刀拍鬆或刴鬆。
8. 豬扒,加入薑汁,撈勻。
9. 豬扒,加入調味料:
a. 胡椒粉少許
b. 蠔油1湯匙
c. 油1湯匙
d. 生粉1湯匙
e. 生抽半湯匙
f. 蝦醬1茶匙
撈勻,醃15分鐘或以上。
10. 白米,清水浸。
烹調:
1. 大火在鑊內燒熱油1湯匙。
2. 放豬扒落鑊,轉中慢火煎香。
3. 豬扒,一面已煎至金黃色,反轉繼續煎。
4. 白米,清水沖洗乾淨。
5. 豬扒,兩面都已轉金黃色,夾上碟。
6. 在鑊內加入白米,轉大火,加入雜豆及薑蓉,炒香。
7. 在米上面,放豬扒。
8. 在鑊內,加入清水,蓋過米面約半吋,冚蓋。
9. 水已滾起,轉最慢火,煮15分鐘。
10. 煮好,夾起豬扒,撈勻飯,灑上蔥粒及芫荽碎。
11. 完成,可享用。
Pork chop yummy rice with shrimp paste (serving for 2)
Ingredients:
Frozen plumhead pork chop 4 pcs
Mixed vegetables 1 plastic cup
Rice 2 plastic cups
Coriander 1 No.
Green onion 1 No.
Ginger (small) 1 No.
Preparation:
1. Pork chop, defrost in tap water.
2. Pour away water after defrost. Season with 0.5 tbsp of cooking salt for 5 minutes, to remove unpleasant smells and add some salty tastes to them.
3. Pork chop, rinse with tap water. Drain.
4. Ginger, get it peeled.
Green onion, cut roots.
Coriander, cut roots.
Rinse with tap water.
5. Ginger, Squash it.
Coriander and green onion, chop well.
6. Pork chop, dry with kitchen towels.
7. Pork chop, beat well with chopper.
8. Pork chop, add in ginger juice. Mix well.
9. Season the pork chop:
a. Pepper little
b. Oyster sauce 1 tbsp
c. Oil 1 tbsp
d. Tapioca starch 1 tbsp
e. Light soya sauce 0.5 tbsp
f. Shrimp sauce 1 tsp
Mix well. Season for 15 minutes or more.
10. Plain rice, soak in tap water.
Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. Put pork in wok. Turn to medium~low flame. Fry well.
3. Pork chop, one side has been fried into golden yellow, flip over and continue frying.
4. Plain rice, rinse with tap water.
5. Pork chop, both sides have been fried into golden yellow, put on plate.
6. Add in plain rice into wok. Turn to high flame. Add in the vegetables and ginger. Fry well.
7. Put pork chop on top of plain rice.
8. Add in tap water above the rice for about 0.5 inch in the wok. Cover up the wok.
9. Water boils up, turn to the lowest flame. Cook for 15 minutes.
10. Finish. Pick up the pork chop. Mix the rice well. Put green onion and coriander cubes on top of the rice.
11. Complete. Serve.
