🥣 Ingredients for the base:
3 medium-sized sweet potatoes
🥣 Sauce ingredients:
4oz | 120g | 1/2 cup cooked chickpeas
1tbsp tahini
1/2tsp garlic powder
salt to taste
1tsp lemon juice
2tbsp water
🥣 Topping ingredients:
zucchini
black olives
chopped sun dried tomatoes
dairy-free parmesan or cheese of your choice
🧑‍🍳Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗If you do not have mandolin slicer you can use a knife, cheese planer or vegetable peeler.
🥣 Method:
Cut 3 sweet potatoes into 1.5inch | 4cm slices.
Steam sweet potatoes until tender for about 15 minutes.
In a food processor bowl combine 4oz | 120g | 1/2 cup cooked chickpeas, 1tbsp tahini, 1/2tsp garlic powder, salt to taste, 1tsp lemon juice and 2tbsp water.
Blend until smooth and creamy.
Taste and adjust it as needed.
Grease non-stick pan with oil.
Place sweet potato slices in a pan and mash with a fork or potato masher.
Season with salt and black pepper.
Cook over medium heat until the bottom is golden and crispy.
ℹ️ Alternatively you can also bake sweet potato crust in the preheated oven at 500F | 260C for 15 minutes.
Flip mashed sweet potato over when the bottom is cooked.
Spread the chickpea sauce first.
Add zucchini slices, olives and chopped sun dried tomatoes.
Add dairy-free parmesan or cheese of your choice.
Cook until the bottom is golden and crispy.
ℹ️ Alternatively you can grill sweet potato pizza in the oven for about 15 minutes.
