1 lb cavatappi noodles
1/2 lb shrimp
1/2 lb crab
1/2 lb lobster
2 tbsps flour
1/2 cup sherry wine or chardonnay
1 tsp lobster base
3 tbsps butter
1 tbsp garlic
1 cup heavy crem
2 cups half and half
1 cup colby jack
1 cup mozzarella
1 cup cheddar
1/2 cup monterey jack
1/2 cup parmesan
AP seasoning, old bay, cajun seasoning, smoked paprika

My sauce base is very similar to yours ... I add a half a cup of buttermilk, for the tang. I heat up my milk and add 3 to 4 hits of Tabasco and three bay leaves. If I was making the seafood version of this, I would poach shrimp and lobster shells in my pasta cooking water, to infuse that much more flavor. You are so right about grating your own cheese; it makes a huge difference!

This was a hit. Next day, the guys went straight to the fridge after work, didn’t even take work clothes off 😂. The Sherry and Parmesan are a must to get that signature ‘taste’. Im from MD so you know I slammed it with OBS. Thank you for sharing this recipe.

I have the shrimp and lobster meat for this, but not the crab. Could I use crawfish meat in this? I have some in the freezer that I have no idea what to do with it. This looks so delish I am going to have to try it. Straight up I could take a BATH in that cheese sauce! Great day in the morning!

@wallabumba, you sure can use the Crawfish in it. Because it's a cousin of lobster it may read a little bit heavy that way, not that that would ever be a problem. If you still have it in the shell, once out of the shell use the shells in your pasta cooking water to infuse that much more flavor.

This is outstanding.. i have tried like crazy to figure out the chick fila mac n cheese. I have tried gouda, belavitino, cheddar and mozzarella. This looks amaxing. Question?? this might be a silly question but, when you start the mixing process (@ the 5 min. mark) does it make a difference if you use a wisk instead of a spatula? wondering if too much air in the cheese will effect the outcome

I’m late actually watching this video after thanksgiving rather than before and when he mentioned the lobster base I was thinking to myself that I’ve never seen Better Than Bouillon lobster base in stores. I’ve seen the chicken base and beef base but not lobster. Gonna have to order it from Amazon I guess.
