I was brainwashed that all Italian food had Italian seasoning, and anything creamy needed heavy cream. Your channel has taught me many things! I no longer overcomplicate Italian food, and the end result has my family and myself eternally grateful. THANK YOU, Vincenzo!!!

I was in the fake belief too, that italian food means pasta, tomato sauce, mozzarella, basil, oregano, garlic, and that's all. Then I have read a book about real Italian kitchen (kitchens, because he enlightened me, that there is no single Italian kitchen, but a lot different), and because of that, I started to search videos like your channel has. I am glad I found Vincenzo's plate. :) Even if you are ideological enemy of Uncle Roger. :P

My grandfather was a Slovenian soldier who fought in WW2. During a time late in the war, his platoon had no rations and were unable to cook anything due to the fact that fire or smoke could potentially reveal their position to enemy soldiers. They had to live off of whatever raw foods they could find-vegetables, potatatoes, meat if they were desperate, and if they were lucky, some wild fruit- all of which often tasted so bad that my grandfather would either have to give up meals or ask his fellow soldiers to help force the food down his throat. I saw less fear and disgust in my grandfather’s eyes when recounting this story to me than Vincenzo reacting to these Facebook pastas.

You can literally see the fear in my eyes while watching this videos, this is so scary and shouldn't even be in here, but I'm doing this because I want you guys to also understand that there are far better recipes out there than this one. I'm glad we were able to share the same sentiments.

While I agree with the statement "there are no rules", I have a feeling creators like her are making these "recipes" as outrageous as possible in order to get the views and only the people who have never had a properly cooked italian meal can find this tasty and edible. 16:39 I can see from a meter away from a small monitor that that semolina log is still raw!

I’m so glad there’s a channel online that helps to inform people of authentic Italian cuisine. These other recipes are what people are brainwashed to eat. With modern day social media, everyone thinks they’re a chef and know better or can come up with a clever new recipe or short cut that’s far worse than the original recipe. People need to learn from the past and see what the traditions are first rather than making up bull crap recipes that ruin food.

These "pasta dishes" were awful to watch. Even I - not Italian - have managed to learn a thing or two about Italian cooking. One important things is respect for the ingredients and their flavours. Every recipe is carefully thought through and tested for generations to get the most appetizing dish from less ingredients than many used here and the exessive use of cheese doesn't make it more Italian. I still got a lot to learn about Italian cooking, but this was a horror to watch. Finally, a big thank you for making us stay on the right path when learning about Italian food and its rules.

It was disgusting to look at these people trying to cook especially the last one putting the spaghetti in the blender, OMG that was horrible! Vincenzo's the best!

this is exactly why if you want to cook ethnic food, watch from the cook from the "home country". Italian food by first generation Italian, Chinese food by first generation Chinese and so on. I don't trust cooking from a cook who makes "foreign dish". Love your show. NO CREMA in Carbonara and no bacon but guanciale, Fettuchini Burre... Love your video.

Vincenzo your channel is one of the channels that i rely on when i want to make something authentic, for example i did the bolognese sauce the authentic way with a lambrusco and it was amazing. however to finish some of my celery and eggplants before they go bad i wanted to make a caponata and i didn´t find it on your channel, what i find these days is a video reaction. I would appreciate if you can add more videos exploring nice italian dishes.

I was so happy to hear you talk about pho! It's one of my favorite comfort food! I miss how my mother would make a huge batch for the family. The whole kitchen would smell so good and the house gets warm. I was never good at cutting scallions, they'd make me cry, but I'd pull through because a bowl of pho isn't complete without the scallions and cilantro. I can get a good bowl of pho, but it'll never be like my mom's haha. If you like pho, please try bun bo!

Hi Vincenzo, when I was in Italy for a week as a guest in someone's house, one night we ate Bigoli con l'arna. It's a Venetian pasta with duck, the pasta, bigoli, is basically very very thick spaghetti. It was the most delicious thing I ever had. I just wanted to share that, and I hope you will maybe review or demonstrate this underrated dish.

Pasta in the first video is called "gniazdka". I think lady who made it is, judging from name, from Eastern Europe like me. We use this pasta (btw, here we call pasta: makaron :D) for chicken soup. It is made this way (like bird nest) to make it easier to put one portion on the plate before your pour soup in. Would never think that someone use it as spaghetti substitute. Yellow cheese was most likely grated local cheese, or dutch/swiss as they are more popular around this part of the world then italian ones. Second video was funny. I just made complete dish in 8 minutes: cooked parpadelle and made alfredo sauce. Even if I want tomato sauce for my makaron :P I can do it in time that pasta is cooking, so 8, 9 minutes? Dunno why people doing eintopf from pasta?

I feel bad for Italians. Italian cuisine is the most abused and bastardized cuisine in the U.S. I've never had Italian cuisine from Italy (one day, I will!), but when I try to make a dish I try to stick as close to authenticity as possible. I love what I cook, I can only imagine how delicious it is when it is 100% authentically made! Such an art.

And the girl who jamed a fork in a running blender, well there would not be any sense in takin some flour and and a egg and making some fresh pasta.
