Stuffed Eggplant:
3 large Eggplant
1 large Onion - coarsely chopped
3 cloves Garlic - sliced
2 + 3 stalks Celery - chopped
1/4 cup Fresh Basil - chopped
1/4 + 1/8 cup Parsley - chopped
10 + 22 oz Peeled Plum Tomatoes - crushed
1 cup Bread Crumbs - approx
1 cup grated Pecorino Romano Cheese - approx
1 tsp Powdered Garlic
1 Tbsp Oregano
4 medium Potatoes - sliced ½ inch thick
3 medium Carrots - large chunks
Olive Oil
Water
5-6 Fresh Basil Leaves - torn & sprinkled on top
Salt & Pepper to Taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

That's where I thought my dear grandmother and grand aunt I loved and miss so much were... in Heaven, but later I learnt that all who have died have gone back to dust (Genesis 1:7; 3:19) and they are not aware of anything now (Ecclesiastes 9:5) but one day they will be resurrected just like Lazarus was brought back to life by Jesus (John 11:11-14; 11:17-44; 5:28&29; Acts 24:15). God does not lie about the promises he makes and He also resurrected his beloved son Jesus as proof that all others will also come back to life. So, like me, Gina can hope to meet her Mum and grandmother again at that time. They are just resting in peace right now.

@@lizettegonsalves7878 as far as my reading and learning kbow that our bidy turns ti dust but soul never dies and remains alive for ever and does not loose it’s conscious or memory and those of deceased loved ones which have a good account with their Lord are permitted to visit their family periodically . I experience these very often .

@@sbg7262 I’m so sorry I took so long to read my mail and see your message. Thank you for sharing your experience. I too used to be confused about the condition of the dead and if they were really alive somewhere. Now I am not, because Jesus himself said that God’s Word is the truth (John17:17) so it has all the truthful answers. Jesus likened death to sleep (John 11:11&14) since God has the power to bring the dead, back to life, as He (God) did with His own beloved son, Jesus, when He (God) resurrected him (Jesus) on the 3rd day and He (God) gave his son, Jesus, the power to resurrect Lazarus who had been dead for 4 days (John 11:17 & 40-44). During those 4 days Lazarus was dead and not living anywhere otherwise he would not need a resurrection, if he, or as you say, his soul, was alive elsewhere, right s bg? Likewise He can awaken those who have died as Martha too believed in the resurrection on the last day, that is, some time in the future as also promised in John 5:28&29 and in Acts 24:15 which says that there is going to be a resurrection (in the future). It is so comforting to know that the dead have not been forgotten by God, don’t you think so? Also you may want to read Ezekiel 18:4&20. Both those verses say: “The soul (or person) who sins is the one who will die.” So the soul is the person himself or herself, just as it says at 1 Peter 3:20. And because we, all humans have inherited sin from Adam (Romans 5:12) we all die. But how good it is to know that one day even if we should die and become “residents in the dust” (Isaiah 26:19) we, “all corpses” will be brought back to life. The good news Bible says in that same verse “Those of our people who have died WILL live again! Their BODIES WILL COME BACK TO LIFE. All those sleeping in their graves will wake up and sing for joy. As the sparkling dew refreshes the earth, so the Lord will revive THOSE WHO HAVE LONG BEEN DEAD.” Does this explain better what I tried to write in my previous message? Sorry if it was a bit long… but I just love to share what I have learn from what is written in the Bible because it is so comforting and gives us hope.

Do not ever change the length of your videos! I miss my Nonna so much and I love to sit and watch Gina for hours. There is fast forwarding available for the few but if you shorten the majority will have to sacrifice and we enjoy so much!!

I lost my dear Mother recently and I wanted to cook something to remind me of her: She made amazing stuffed eggplants so l searched for the recipe and Gina came into my life, it was just like seeing and hearing my Mama again. 😂 I followed her recipe with joy and tears and when she started singing, that’s it, she got me balling my head off😢 God bless you Gina, you are a treasure. I'm 66 and I grew up in a Polish neighborhood in Reading, PA. Listening to Gina and her beautiful grasp of English takes me back to a similar cultural style that I experienced and appreciated as a child. As Gina's main ingredient is love, she stirs up so many good memories. I am undone!

I didn't think I could enjoy this woman and her show ANY MORE than I already do - and then she sang "Mamma"! It was the song my father taught me when I was ten years old, and his eyes would tear up every time he sang it. Now MY eyes tear up, as my own mamma passed away two years ago. Hearing you sing it, Gina, filled me with so many feelings - gratitude, love, and appreciation. You are a treasure!

Dear Gina, I watch your videos all the time and I love them. It's not just the real italian recipes and the way you prepare them, it's a' you and the way you speak your Itali-ish! You have a wonderful personality and are a very conscientious cook. BTW, you are not "TOO SLOW!" Perfection takes time, it cannot be rushed! Hello Gina, when I watch you, I think of my mother, aunts, and grandmother, what you do is becoming a lost art. When I watch you it brings tears to my eyes and great memories. Hello Gina you are such a pleasure to watch you remind me of my mother..We left Italy in the late 50's to move to Australia.For a long time i worked l long hours and didnt cook my traditional italian food especially after my parents passed ..But i have been watching you and now that i am retired am enjoying my Italian food again..Thank you because i am following you as i go Thank you for your videos if i need to know a recipe i always come to your videos..Forever a fan

I cooked this dish with a few modifications (added chopped mushroom, zucchini & peperonata) for my family. They loved it. Grazie mille, Gina. Che Dio ti benedica My mother has an operation this month. Please pray for her. 'Mamma!' ❤️

This a beautiful dish. It is so wonderful that no matter how old you are to have the love she has for her MOTHER you can hear it in her voice when she say I miss my mother. Loving yet so sad. I never knew my mother she passed when I was 21/2yrs. old. I'm now 73 yrs. old. God bless her for the LOVE and compassion she still feels for her.😥😥😥

Another must-try recipe! I made your Eggplant Parmigiana recipe and it was absolutely delicious. Gina, you are so loved and now a big part of my kitchen. I think you must have a cooking angel by your side all the time, because so much goodness and deliciousness flows from you. Signora sei meravigliosa. Today we made stuffed eggplants together. I was born in Australia from Italian parents; lost my darling mother 3 months ago and she cooked just like you. I’m so grateful for your videos. This way I cannot forget her recipes. God bless you ! 😘

This lady is the epitome of grace and kindness. Gina reminds me of my mother whom I miss terribly. Although she was Portuguese, there are a lot of similarities between the 2 cultures. May God continue to bless you!
