📌 Ingredients for 6 servings:
2 carrots
1 dry onion
½ bell pepper
1 parsnip root (or parsley)
3 tablespoons of oil
2 pumpkins (approx. 500 g)
1.2 liters of water
salt and pepper
1 bay leaf
200 ml liquid cooking cream (min. 20% fat)
2 egg yolks
4-5 cloves of garlic (or to taste)
the juice of 1 lemon
fresh dill

🔪 Preparation
Clean and cut all the vegetables. Heat the oil in a pot of approx. 4 liters and sauté the onion, carrot, parsnip and bell pepper for approx. 10 minutes, until they soften and develop their flavors.
Also put the zucchini cubes in the pot, add salt, pepper, bay leaf and 1.2 liters of water. Let the vegetables simmer with the lid on low heat for 20-30 minutes.
Remove the bay leaf and puree the vegetables with a hand blender until smooth and creamy.
In a bowl mix the 2 egg yolks with the cooking cream and a pinch of salt. With a ladle pour little by little the hot soup over the cream and mix.
Turn off the heat and when the cream mixture in the bowl has become hot, pour it into the pot over the vegetable soup. Adjust salt and pepper to taste.
Add to the soup: garlic passed through a press, lemon juice and 2-3 tablespoons of finely chopped dill. Put the lid on and let the flavors infuse for 10 minutes, then the soup is ready to serve.
