The voicing of a Silbermann instrument is exceptional! They are unique in all respects. The organist here maintains tempo beautifully. Magnifico!

In historic reports JS Bach regularly played using a 16 or 32'' pedal posaune stop when they were available.

It is being played in C minor. This organ (finished in 1714) is tuned to A=473hz rather than the typical 440 we see today.

It's because of the organ tuning. But many organ students learn this piece in d minor, because it might be easier.

Answering as an organbuilder and fellow organist - I am quite certain that the organ has flexible wind, and deliberately so.
