I remember

You have your times mixed up. The Big Brawl was released in 1980. Cannonball Run was released in 1981. I know every Jackie Chan movie ever produced. (I'm not bragging, I just fell in love with him after Bruce Lee died, he was my hero as a kid) I was stationed overseas when he was becoming a household name internationally. The movies I was watching were dubbed in English Chinese cinema movies but in 1980-1981 I was a senior in high school and I knew I was going to love this guy. I had been a martial artist since I was 6 years old, at that point, and was a QCQ trainer later in the military. I followed his career closely, mostly because most of his "martial arts" were choreographed sequences, though he is trained in various forms of Kung Fu, Karate, Taekwondo (my initial training style), Judo and Jeet Kun Do.

Here, it's really more about the limitations of a U.S. production. The actors and stunt actors playing his opponents weren't up to speed with complicated HK-style choreography, and time allotted for filming action scenes was very limited. They had to keep it simple and broad.
