Its because they are easy to do. You can see some other actors in his movies doing the same thing. Like Lucas Till(he played Macgyver in the remake) copied his moves perfectly when he was in that movie where Jackie Chan played an agent who was looking after some kids.(I forgot its name) .

What so great about Jackie's classic movies is that the fight scene is ONE long single take without cut in between, making the fights look more organic and impressive. Meanwhile fight scenes in modern Hollywood movies and shows are stitching hundreds of of 1-2 second shots (and from different angles!) together, making it uncomfortable for the eyes to watch.
