You find places to take a breath when signing. Another thing is take a breath before you sing, you can find some breath exercises on youtube. I would recommend them.

You're not alone. Make the "Ooo" sound starting from your low register then start getting higher. Once you feel like you've reached your limit do switch to the Mickey Mouse/Opera sound and you should be able to keep going higher. That difference is head voice. Obviously it sounds funny but just below that with more breath comes a nice head voice. But for now just practing accessing head voice that way until you get a feel of how to do it on command and strengthen the muscles. Listen to "Supermarket Flowers" by ed Sheeran and go to the end of the song where he sings Oooooh Ooooooh oooooooh and you should be able to mimic something like that it should feel like that just maybe not that high yet. Eventually you'll be able to switch to it smoothly and less dramatically and with more air flow.
