Well, he's using a Wüsthof Classic Ikon 4086. I have that knife as well and it costs about 50-60 Euros. I'd say it's worth the money, though.

As a culinary teacher for middle school, I've tried to teach my students how to use "the claw" so they don't cut themselves. Now I can just have Jacques Pepin do it. I'm sure they'll listen to him. Splendid!

I’m just getting started with home cooking-thank you Covid lockdown- and I’ve watched dozens of knife cutting videos from world-renowned chefs… but this is the first one that actually allowed me to significantly improve my knife cutting skills! This man is such a great teacher!

@@jdd8826 You're welcome. The Zwilling Pro line is just as good, but a bit less expensive and has a curved bolster, which makes it perfect for the blade grip. If you're looking for a professional chef's knife, I recommend checking out both: the Wüsthof Classic Ikon Chef Knife ‎1040330120 and the Zwilling Pro Chef Knife 38401-201-0.

Same here. Jacques is truly a legend who makes cooking easy and fun. I remember watching him and Julia Child on PBS every weekend as a little kid. I learn so much when I watch him or Julia Child. They are my two favorite chefs

I can always learn something from a real professional. That's why I clicked on this. I've been cutting, slicing and chopping for 60 years. My father taught me but he didn't teach me to peel. Mr. Pépin just did.

As a Chinese Cantonese man, we have a traditional knife called the Cleaver. One of my favorites. Very versatile and convient for scooping up the chopped veggies after prepping. Everyone should at least get one of those.

I always find peeling before cutting off the ends is easier since I don't have to peel right to end or start right at the beginning, I will cut off both ends after peeling anyways.

You don't need a serrated knife if your other knives are sharp enough

If you are cutting a lot of bread it is probbably easier to have a serated knife than keep sharpening your other knives

If you actually watch his shows or his interviews you would know, he apologizes, often, for his Connecticut accent! I love this man. I have a couple of his books: The Apprentice, Essentials (which comes with a techniques DVD-priceless!)
