It where pollen collects on bees. That is the only sense I can make of it.

I always thought "it's the bee's knees" was a jokey corruption of "it's the business" - an expression meaning "it's the best thing".

It originated in the 60s or 70s, much of the humour of the day involved pronouncing words in a weird way and constructing rhyming slang out of them, so the phrase "it's the business" (meaning it's great / it's the ultimate thing) got corrupted into "it's the bee's knees".
