The number of Tokyo Cafes I've hit up since living here is uncountable, but here are a few of my favs that I'd love to share with my fellow coffee/cafe lovers 🫶☕ Which was your fav? Did I miss any you recommend, LET ME KNOW! (There might be a part 2 for Tokyo in future 👀)

Thanks for the great video and a list of places to visit when I finally make it back to Japan! As someone who has been deeply ingrained and working in the Specialty Coffee scene since 2006 in the US, it's really cool to see these places through the lens of a "regular customer ", if you know what I mean. The US was integral for the 3rd wave movement, while Scandinavia joined in and helped take "coffee science" to the next level, but... the Japanese and their dedication to craft, and especially, service, really takes this kind of coffee experience to even greater heights and have set the standard for a handful of years now.

Enjoying my breakfast and coffee with you. Coffee culture was nowhere near as advanced in the early 90s in Osaka. No Starbucks in 1992 😮 I actually didn't drink coffee until after Uni when I moved to Japan. But every vending machine and family restaurant had iced coffee and I've been drinking it ever since. Must have been a great video to make! 😊

Brunost /Mysost etc is actually no real cheese but made of the "leftover" whey which is cooked down for hours and the sugar in it caramelizes over the time. Just before the end sheep's/goat's milk or a mix of it is added and cooked with it to give it its more interesting richer flavour. Then it is cooled and eaten sliced. You could make it at home, if you have the time but the smooth not grainy texture is hard to achieve. Eaten on bread, on pancakes, cheesecakes, cookies, milk shakes, ice... or savory on sandwiches, pasta, pizza, in sauces it is very nice

It's great that there's quite a number of specialty coffee stores in Japan - no surprise also that some of them are set up by people from overseas including from Australia. Ngl, seeing this makes me a bit unsure about my decision to book accommodation with breakfast included in Tokyo when you could just go to a local cafe for brekkie (or if being cheap, the conbini), although I guess it does save some money over the long run - cafe food and coffee can get a little pricey having it every day hahaha. I'll see if I can try at least a few of these places on my upcoming trip - should also try more variants too; always seem to err towards a chai latte in Australia for some reason.
