@-Reagan10 ай бұрын
So many cooks have failed at these - even when recreating the original recipe with the Japanese chef who brought them here. You see the video footage from the morning show where she made them perfectly but, later when a cook made them about 100 different times, using different methods and tools her pancakes always fell flat or were overdone outside and raw inside. She invited the OG chef on there channel to show her exactly how to make them. She failed. That’s because the chef didn’t tell her one most important thing - and it’s good you have the mix - because it likely contains the secret, missing ingredient. The secret is a commercial standard stabilizer. It CAN be done with a combination of extra dry egg whites and cream of tartar but it’s not quite comparable to the commercial stabilizers. Just a heads up that you might check out the videos where they make it before you attempt it. It’s deceptively more challenging than it looks.

People really underestimate how long it takes for thick things to cook. I worked at a local pizza spot that made *huge* calzones, they took a solid 20-25 in the oven, which had to be timed with the rest of their order obvi so everything goes out hot, and the servers would come asking about their table within 15 minutes because the guests don’t understand calzones are *thick* boys and if you don’t want a cold center it takes a while. I’d rather make you wait for the best product than send it out undercooked and have you wait *another* 30 minutes.
